Kadalai maavu sambar | Instant Sambar for Idli, Dosa
Kadala Maavu Sambar is an easy and instant sambar based using tamarind water, Besan flour (Kadala Maavu) and spices. This is made using least number of ingredients and within 20 minutes. A perfect accompaniment for Ven Pongal, Idli and Dosa. This is also called Bombay Sambar.
Kadali Maavu Sambar is an instant Kuzhambu made with least number of ingredients. This goes very well with Idli, Pongal and Dosa. Made just using tamarind concentrate, chili powder and besan flour as a key ingredients. This is also called as Bombay Sambar.
Few Variations that you may want to try while making Kadalai Maavu Instant Sambar
- Instead of onion, you can use shallots (small onion). This gives an excellent taste and flavor to the kuzhambu
- Add 1 or 2 green chili if you like it more spicy. This gives a great flavor to the kuzhambu
- You can use Sambar Powder instead of Red Chili powder
- We prefer to make without garlic. But if you like the garlic flavor then you can also add 3-4 cloves of garlic

Ingredients
- 1 nos Onion Roughly chopped
- 1 nos Tomato Roughly chopped
- 1 small lemon size Tamarind
- 1 tsp Red Chili Powder
- 1 tbsp Gram Flour (Besan / Chickpea Flour)
- ¼ tsp Turmeric Powder
- ¾ tsp Salt adjust to your taste
For Tempering
- 1 tbsp Sesame Oil
- 1 tsp Mustard seeds
- ¼ tsp Fenugreek seeds
- 1 sprig Curry leaves
Instructions
Preparation
- Soak the tamarind in the warm water and extract the juice and keep it aside.
- Chop the onion & tomato roughly and set it aside.
Start with Tempering
- Heat the oil in the pan. Once the oli is hotadd the mustard seeds. When the mustard seeds begins to sputter add fenugreek seeds and the curry leaves
Cooking Kadal Maavu Sambar
- Add onion and saute the onions till it turns transparent.
- Then, add the tomato, pinch of Turmeric powder and saute them till the tomato is mushy.
- When the tomato is cooked add the extracted tamarind juice, Also add Red chili powder and salt.
- Boil the tamarind extract for about 10 minutes.
- Mix 1 tbsp of Besan flour with 1/2 cup of water and keep it ready.
- Once the Kuzhambu start to boil, add besan mixture and stir well to avoid lumps. Add water to adjust the consistency of the sambar.
- Boil for couple of minutes and switch off the flame. Kadala Maavu Instant sambar is ready to serve with Idly/Sambar.

can we add veggies in it
yes surely we can add, as the name suggests its quick version of sambar so i have not used veggies, but we can add capsicum which will take only couple of minutes to cook
