Ingredients
- 2 Cup Cooked Rice 1 Cup - 250ml
- 1 Onion Finely Chopped
- 200 grams Carrot
- ¼ tsp Turmeric Powder
- ½ tsp Sambar Powder
- 1 tsp Salt Adjust As Needed
- 1 tbsp Coriander Leaves
For Tempering
- 1 tbsp Cooking Oil
- 1 tbsp Ghee we can use oil too
- 1 tsp Mustard Seeds
- 1 no Green Chili slit
- 1 sprig Curry Leaves
- 1 tsp Split Urad Dal
- 1 tsp Split Bengal Gram (Channa Dal / Kadalaparuppu)
- 2 tbsp Cashews (or Peanuts)
Instructions
- Grate the 200 grams Carrot and set it aside. Finely chop 1 Onion and have it ready.
- Heat 1 tbsp Cooking Oil in a pan, adding 1 tbsp Ghee for extra flavor. Once hot, add 1 tsp Mustard Seeds and let them sputter.
- Add 1 tsp Split Urad Dal, 1 tsp Split Bengal Gram (Channa Dal / Kadalaparuppu) and 2 tbsp Cashews in the oil. Mix well and fry until the dals turn light brown.
- Next, add 1 no Green Chili and 1 sprig Curry Leaves, and stir well to combine.
- Add the chopped onion and cook until translucent, stirring occasionally.
- Once the onion is cooked, add the grated carrot and mix well. Season with ¼ tsp Turmeric Powder, ½ tsp Sambar Powder and 1 tsp Salt. Cook, stirring occasionally, until the carrot is softened through.
- Once the carrot is softened through, turn off the heat. Gently fold in 2 Cup Cooked Rice with a spatula. Mix until the rice is evenly coated with the carrot masala. Garnish it with chopped 1 tbsp Coriander Leaves
- The yummy Carrot rice is ready to serve.

sirukilangu can be made in another method also. we can cook the kilangu in cooker ,peel the skin. Next pour little oil in kadai,add mustard , udad dal,hing, curryleaves, ginger, green chillies chopped. Then add the boiled kilangu fry for sometime, then add grated coconut. This tastes different.
