Peanut Sundal(Verkadalai Sundal)

Peanut sundal is something which i tried only since recent past but it turned out to be very good. You can also give a try. This is something different from our conventional sundal.

Raw Peanut - 1 Cup
Red chilli - 1
Salt - To Taste
Curry leaves- Few
Grated Coconut - 2 teaspoon
Sundal Powder - 2 teaspoon

For Seasoning:
Oil- 1 teaspoon
Mustard seeds - 1 teaspoon

  1. Soak the peanut/verkadalai in water for atleast 3 hours. I usually soak overnight. It depends on the quality of peanuts. Most of the peanuts need more hours of soaking. If you forget to soak overnight, then boil the water and add boiling water to soak the peanuts before 3 hours
  2. Rinse the peanut and pressure cook it along with salt. Allow for 3 whistles
  3. In a pan, heat the oil and when the oil is hot add mustard seeds and curry leaves
  4. When the mustard seeds begins to sputter add the broken chilli and fry for a sec
  5. Now add the cooked peanut/verkadalai and mix it well. 
  6. Add sundal powder and grated coconut and mix well
  7. The delicious Peanut sundal/Verkadalai Sundal is ready for neivedhyam on Navrathri festival as well as for a healthy evening snack
