Vegetable Pickle

Vegetable pickle, yet another variety of pickle. The taste is really yummy and procedure is same as most of the other pickles. Try this recipe and give your feedback!!


Beans1 handfull
Kothavarangaai(Cluster Beans)1 handull
Avarakaai(Broad beans)1
Green Chillies15
Turmeric powder1/2 teaspoon
Salt3/4 cup
Mustard seeds1 teaspoon
Hing1 teaspoon
Fenugeek seeds1 teaspoon
Gingelly oil2 tablespoon
Chilli Powder1/4 cup

Vegetable PickleMethod:

  • Peel the skin of potato and carrot and chop into thin slices vertically
  • Chop the remaining vegetables into thin slices vertically
  • Clean all the chopped vegetables and dry it and put it in a vessel
  • To this add salt, turmeric powder
  • Dry fry red chilli powder and fenugreek seeds and grind it to a nice powder in a mixer
  • Add this powder to the chopped vegetables and mix it well
  • Extract the lemon juice and keep it aside
  • Heat a pan, add gingelly oil and when the oil is hot add mustard seeds and when the mustard seeds starts to sputter, add hing and fry for a while
  • Add the seasoned ingredients to the pickle
  • Add the lemon juice to the pickle and mix well and keep it for 2 days
  • The mouth-watering vegetable pickle is ready to serve after 2 days. Keep the pickle in a air tight container and refrigerate and use it

Madam, Please clarify me whether 4 cups of chopped lemon pieces are to be added along with other vegetables, apart from lemon juice of 4 lemons.

How long can this pickle be preserved?


Hi Nandini

If we refrigerate, we can keep for long as other pickles. The spice and salt will make the vegetables fresh without rotting.

do u know of any recipe for pickle that can be made with eggplant. if so it would be wonderful.

can u suggest some ways of using eggplant as a pickle?
