Kadai vegetables is one of the healthier and delicious side dish for Chapati. Apart from the traditional dal side dishes, this recipe is more healthy as we are including many vegetables. Paneer adds extra taste to this dish, but we can also exclude paneer as it is rich in fat. We should try making all the gravys less spicer as we would have children at home who would like to try the dishes. Give a try and tell your comments!

Kadai Vegetables

Ingredients:

Tomato
Capsicum1
Green Chilli1 (Optional)
Oil2 teaspoon
Turmerica pinch
Potato1
Carrot1
Beans5
Peas1/4 Cup
Paneer Cubes10 pieces
SaltTo Taste
Coriander Powder1 tablespoon
Garam Masala1 teaspoon
Chilli Powder1 teaspoon

Ingredients for Masala(Grinding):

Tomato3
Onion2
Cashew10

Method:
  • Chop the tomato and capsicum into 1 inch square pieces and keep it aside
  • Chop the green chilli length wise into 2 pieces
  • Chop all the vegetables length wise to 1 inch piece each a finger thickness and cook it and keep it aside
  • Fry the paneer to golden brown color using little ghee in a pan and keep it aside
  • Grind the masala ingredients in a mixer to a nice paste and keep it aside
  • In a heavy bottomed pan, pour the oil and add the tomato, capsicum, green chillies and saute it using a spatula
  • When the tomato is fried completely, add the paneer and cooked vegetables and mix well and fry for 3-4 minutes
  • Now add coriander powder, garam masala, chilli powder and saute it for another 2 minutes
  • Finally add salt and the ground masala paste and mix well. Add little water and stir well. 
  • Allow the the kadai vegetables to cook for sometime till it becomes a thick gravy
  • Remove from the flame and garnish with coriander leaves
  • The mouth-watering kadai vegetables is ready to serve with hot chapatis
