Vermicelli Upma / Semiya Upma is an easy breakfast dish and also a great lunch box dish for the kids. We can make a plain upma or enrich it with healthy vegetables.

Ingredients:

Vermicelli (Semiya)*2 cups
Onion1 medium size
Carrot1 medium size
Potato1 medium size
Green Peas1 hand full 
Gingersmall piece
Oil1 tablespoon
Saltto taste
Water4 cups

* Try to get a roasted semiya from the market. If you are not getting Roasted Semiya, no worries - you just need to fry the semiya in 1 teaspoon of ghee till you get a nice aroma and the color change to light brown color. If its not fried, then the semiya will stick to each other while cooking and the final Upma will not be fluffy.

For Seasoning:
Mustard Seeds1 teaspoon
Channa Dal1 teaspoon
Green Chilli2
Curry Leaves1 teaspoon

Method:
  1. Wash carrot and potato and peel the skin and chop them finely. Finely chop the onion, ginger and green chillies and keep it aside.
  2. Heat the pan. Once the pan is hot pour the oil and add the mustard seeds. When the mustard seeds begins to sputter add the channa dhal and fry it till it becomes light brownish color.

  3. Add the curry leaves, chopped onion, green chilli and ginger and fry again till the onions turns transparent. Add a pinch of salt so that the moisture in onions will come out which helps in quicker cooking of onion.

  4. Once onions are cooked, add the vegetables and stir fry them in medium flame for 5 minutes and then add 1/2 cup of water and cook the vegetables

  5. Then add water to the pan along with salt and bring it to boil. The water ratio I used is 1:2(Semiya: water). For roasted vermicilli, this measure of water is should be perfect. Sometimes for non-roasted vermicillii, we may need to add extra 1/4 cup of water 

  6. When the water starts to boil, add roasted vermicilli and mix well

  7. Keep the flame low and cover the pan and allow the vermicilli to cook completely. Finally, when the semiya is cooked completely and becomes fluffy, remove from flame

  8. The yummy Semiya Upma is ready to serve with Coconut Chutney
