Karamani Payaru Masala | Yard Long Beans Masala
Karamani Payaru Masala (Yard Long Beans) is a unique gravy made using Karamani Payaru and fresh masalas. This goes very well with Indian breads and as well as with Idli / Dosa.
Karamani Payaru Masala, a delicious curry made with yard long beans, onion-tomato gravy along with Indian spices. This is one of the interesting masala curry as we are going to use fresh yard long beans and enrich with mint flavor. This masala curry tastes so good with Roti/Naan/Paratha or even with South Indian dishes like Idli/Dosa. Karamani also known as Yard Long Beans, is a very nutritious vegetable with least amount of calories and highest amount of soluble and insoluble fibers making it a perfect food for diet planners. Most of us frequently make masala curry with Paneer or potato or Chole. But sometimes with the regular vegetables we can make the curry even more interesting and heathier.
Tips for making Karamani Payaru Masala
- We can steam cook karamani to retain its freshness and little crispness. To speed up, we can pressure cook karamani for 2 whistles.
- If you don’t like strong mint flavor, reduce the mint leaves quantity.
- Cook the masala till the oil separates and then add the cooked karamani.
- We can enhance the masala by adding cashews while grinding the tomato, mint etc

Ingredients
Vegetables
- 200 grams Karamani Payaru (Yard Long beans)
- 1 nos Tomato medium
- 1 inch Ginger finely chopped
- 2 nos Garlic cloves
- 1 handful Mint Leaves (15-20 leaves)
- 1 tbsp Coriander Leaves chopped
Masala Ingredients
- ¼ tsp Turmeric Powder
- 1 tsp Red Chili Powder
- 1 tsp Cumin Powder
- 1½ tsp Salt adjust to your taste
Tempering
- 1 tbsp Oil
- ½ tsp Cumin Seeds
Instructions
- Wash and chop the karamani Payaru (Long Beans) about 1 inch length. Take the chopped long beans in a pan and add water till the vegetables are immersed.
- Add turmeric powder and cook the long beans on stove top. We can also pressure cook it and allow for 2 whistles in pressure cooker
- Finely chop the tomatoes. Take the tomatoes, mint leaves, chopped ginger and garlic in a mixer and grind it to a nice paste
- Heat oil in a pan and add cumin seeds. When the cumin seeds starts to sputter, add the ground masala and allow it to cook in low flame.
- Add salt, turmeric, cumin powder and red chilli powder and mix well and allow the masala to cook completely so that the oil gets separated and started oozing out of the masala. This will take atleast 7-10 minutes
- Once the masala is cooked, add cooked karamani and mix well. Adjust salt if needed. Allow the long beans masala gravy to boil. Finally garnish with coriander leaves and remove from flame
- The yummy Karamani Payaru Masala | Yard Long Beans Masala is now ready to serve with Roti / Chapati or with steaming hot rice
