I came across this wonderful and yummy coconut cubes in one of the TV channel. I saw an egg version of this dish. But I made it eggless and Eggless Cococnut Cubes have come out really spongy and delicious. Just we need to make spongy cake and then top it up with jam and dessicated coconut and the coconut cubes are ready to taste. We can make these delicious cakes for out kids Birthday Party or for any occasions.

Ingredients:
Unsalted Butter1/2 Cup*
Sugar1/2 Cup
Milk1/3 Cup
All purpose Flour1/2 Cup
Baking Powder1 teaspoon
Bi carbonate of soda / Baking Salt1/4 teaspoon
Lemon ZestFinely grated zest of 1 lemon
Rasberry Jam1 tablespoon
Dessicated Coconut1 tablespoon

*1 Cup = 250ml

Method:

  1. Pre-heat the oven at 170 degrees Celsius and 350 degrees F. Grease the baking tin with butter and dust it with some flour and keep it ready
  2. First lets prepare the dry ingredients. Pass the all purpose flour, baking powder and baking salt through the sieve atleast twice so that all the dry ingredients are nikcely mixed. Keep this aside. Take butter and sugar in a mixing bowl

  3. Using a whisk, beat them till the butter and sugar becomes fluffy. Add milk to the mixing bowl. Also add lemon zest 

  4. Combine everything well. Next add the flour little by little and gently fold it nicely

  5. Add the cake batter to the greased cake tin. Bake it in oven for 20-25 minutes or till the tooth pick comes out clean. When the cake is baked, remove from oven and keep it on the cooling rack and allow it to cool off

  6. If the jam which we are using is without bits then we can directly apply on top of the baked cake. If the jam is having bits, then gently heat the jam on the low flame and when the consistency becomes thin, then pass it through a sieve to get rid of the bits and then apply the filtered jam on top of the baked cake. Finally sprinkle dessicated coconut on top of the jam. Using a knife cut the cake into cubes.

  7. The yummy Eggless Coconut Cubes are now ready to Serve!
