I came across this wonderful recipe recently in one of the leading departmental store website. We all love the classic tomato soup. This tomato soup recipe has a slight variation from classic tomato soup as we are going to use red kidney beans and red capsicum (red bell pepper) but the soup tastes dainty.The red kidney beans and red bell pepper adds a nice flavour to the tomato soup. Ingredients:
Chopped Tomatoes*2 Cups **
Red Capsicum (Red Bell pepper)2 Big size
Red Kidney Beans*1 Cups
Onion1
Garlic Cloves2
Papprika (chilli) Powder1 teaspoon
Vegetable Stock1 Litre / 4 Cups
SaltTo Taste
Coarse Pepper Powder1 teaspoon
Finely Chopped Coriander Leaves1 teaspoon
Oil1 tablespoon

* I have used canned tomatoes and kidney beans. You can use fresh tomatoes and kidney beans. You have to soak red kidney beans overnight or for 12 hours and then pressure cook them till they are soft and not mushy. 
** 1 Cup = 250ml

Method:
  1. Finely chop the onions and garlic. Wash, De-seed and finely chop the red capsicum and keep it ready. Reserve a spoon of chopped red capsicum and a spoon of kidney beans separately for garnishing. Heat oil in a pan and add chopped onions along with a pinch of salt and saute them till they turn brown color.
  2. Then add chopped garlic and red capsicum and stir-fry them in medium flame for about 5 minutes. Then add paprika powder and salt and mix well. 
  3. To this add tomatoes, red kidney beans and mix well. 

  4. Add vegetable stalk to the pan along with necessary salt and stir well and bring it to boil. Then keep the flame low and cook everything in low flame for about 20-25 minutes. After 20 minutes, remove the pan from flame. Allow it to cool off and then blend everything nicely to a smooth paste. 
  5. Wash the pan and add the blended tomato soup and keep the flame low. Keep stirring for 5 minutes and don't bring it to boil. Finally garnish with coarse pepper powder and coriander leaves and remove from flame. Pour the soup into the serving bowl, garnish with capsicum and kidney beans 

  6. Serve the Tomato Red Kidney Beans Soup piping hot with bread crumbs. Enjoy the healthy soup.
