Pumpkin Soup Recipe
I have first tasted this soup in one of friend’s Birthday Party. I was so surprised to taste this delicious soup. All the time I have tasted only tomato and veg soup and this is a different variety and it was so appetizing and yummy. Pumpkin Soup, a special thanksgiving dish in US and many other countries. Pumpkin soup is made from the puree of pumpkin along with vegetable stock and mild spices. I have added frozen sweet corn which adds an additional flavour to the soup. A simple, yet unique variety of soup to treat our family, friends and guests!

Pumpkin Soup Recipe |
Ingredients:
Pumpkin | 250gms |
Sweet Corn | 1/4 Cup |
Onion | 1 |
Salt | To taste |
Freshly ground pepper powder | 1 teaspoon |
Garlic Cloves | 2 |
Milk | 1 Cup* |
Vegetable Stock | 2 Cup* |
Bread Croutons | 10 |
Butter | 2 tablespoon |
*1 Cup=250ml
Method:
- Remove the flesh from the pumpkin and chop it roughly into small pieces. Peel and finely chop the onions and keep it ready. Crush the garlic and keep it aside
- Heat butter in a pan. Add chopped onions and crushed garlic along with a pinch of salt and saute the onions till they turn translucent.
- Next, add chopped pumpkin and sweet corn and give a good mix. Then add required salt and pepper and stir well. We can reserve
- Keep the flame in medium and cover the pan with the lid and allow the pumpkin pieces to cook till they are tender and soft. This process will take approximately 5 minutes depending upon the quality of the pumpkin. When the pumpkin pieces are nicely cooked and mashed, add the milk along with vegetable stock and stir well and cover the pan with a lid and allow it to cook for another 20 minutes.
- Once the pumpkin and the sweet corn gets nicely cooked and get incorporated with the milk and vegetable stock, switch off the flame. Allow the pumpkin mixture to cool off and then blend it in a mixer or hand blender to a smooth liquid. Clean the pan and add the ground pumpkin juice to the pan and stir well. Adjust the salt and keep the flame low and stir occasionally the soup and cook it in low flame for another 10 minutes but don’t bring it to boil. Finally after 10 minutes, switch off the flame
- Serve the piping hot Pumpkin Soup in a bowl and garnish with bread croutons and coarse pepper powder and enjoy the soup!
