Kal Dosa (Kal Dosai), yet another sponge variety of dosa. This is one of the famous SouthIndian breakfast dish in most of the restaurants. Kal dosa is slightly thicker than the traditional dosa. Generally, in my younger days, my mom used iron tawa for kal dosa, but now in these days, we all are using non-stick tawa. We need to make thick dosa and we have to cook it only on one side. We can see lots of small pores around the dosa and the dosa would be very soft.

Adai is a very scrumptious breakfast dish. Adai Aviyal is one of the famous dish in most of the restaurants in Southern India. Broken Wheat is a very healthy ingredient which is often recommended by all the nutritionist whenever we start speaking about dieting. Broken wheat Adai is a healthy breakfast dish as we are not including rice in this preparation, yet a very tasty adai which goes very well with aviyal. I personally like serving this samba godhumai adai with panavellam (jaggery / palm sugar).
Aloo Broccoli Stir Fry | Aloo Broccoli Curry, a very scrumptious dry curry which goes very well with chapati / roti and also with rice. We all love to have potato stir fry, Potato fry with broccoli is more tastier and we should encourage the kids to have more broccoli by including them in our daily cooking.
Paratha is an Indian whole wheat bread variety. Paratha's can be made with many different fillings. The most favourite and popular filling is with Aloo(Potatoes). Aloo paratha with plain curd and butter or with onion raitha is one of the usual recipes in northen part of India for Lunch. Even Aloo Paratha with our favourite pickle/chutney is a wonderful combination. We can either make cooked fillings or uncooked but cooked fillings always taste better than the uncooked. Here i have given the cooked version of filling. I always prefer to stuff more filling to get richer taste.
Kachori, a very famous crispy Indian Snack. Perfect Kachori should be puffed up and flaky outside and hollow inside the filling usually gets stuck to the crust. Aloo Kachori is a flaky, crisp deep fried pastry filled with yummy potato filling.
Poondu Kuzhambu, a spicy and tasty kuzhambu which is very good with hot steaming rice with a spoon of gingelly oil. This poondu kuzhambu is a very good side dish for Oothappam. Very simple to concoct and great dish for spice lovers.
Samba Wheat is better than the ordinary wheat as it is rich in fibre. Instead of making Vennpongal with rice, we could try doing Pongal with samba godhumai or oats which is much healthier than the traditional pongal made with rice. We don't need to add more ghee also. Channa (Chickpeas) Masala Kuzhambu, a diet style of kuzhambu. Chickpeas are very healthy as they are rich in both soluble and insoluble dietary fibre. They are the good source of protein for vegetarians. Nutritions also say that Regular intake of Chickpeas can lower LDL (bad) and total cholesterol. Due to high fiber content and low GI, chickpeas are excellent for weight loss diets. Salad with chickpeas are tasty and can keep you full longer, controlling the appetite.
Idichakka Thoran (Raw Jackfruit Stir Fry), my mom-in-law used to do this often. I learnt this recipe from her. In Kerala, they call this curry as Idichakka Thuvaran. The reason for this name is, in earlier days, people need to cook the raw(tender) jackfruit and they mince the cooked jackfruit in mortar and pestle that's why the name Idichakka(Chakkaya Idikaradhu). But now, we all are using mixer and grinder instead of mortar and pestle. I have also crushed the cooked jackfruit pieces in mixer only. But mixer crushing makes it more coarse than the hand crushed. If you have a mortar and pestle, then choose them instead of mixer to get more nicer and traditional curry.

Paneer Cutlet, a crispy snack for a wonderful evening as well as a perfect starter too! It is a great snack for special occasions and parties. Crumbled Paneer mixed with bread, onions and mashed potato along with spices coated with bread crumbs makes this very tasty and crispy too :-). These Paneer Cutlet are crispy outside and soft inside. We can also add vegetables to this cutlet. In this version, I have not used vegetables, but we can surely add carrots, beans etc.
Dal Palak, one of the easiest and quickest dal variety, which goes well for Roti / Chapati and also we can mix the dal palak with hot steaming rice along with a spoon of ghee. I have used Pasalai keerai(Palak), but we can substitute with any type of spinach.

Coconut Milk Rasam, one of my favourite rasam. Whenever I feel bored of the traditional paruppu rasam, I just do the slight variation and change it to coconut milk rasam. The flavour of coconut milk cooked with tomato and tempered with ghee is a divine taste. Any stir-fry vegetable poriyal is a perfect combination for this yummy rasam!
Broccoli is a one of the very healthy vegetable which is packed with dozens of nutrients. This is one of the vegetable which the nutritionists are recommending to have multiple times a week. We can include broccoli as part of our daily salads. I tried the fusion between usili and Broccoli which turned out very good. Normally we do usili with beans, vazhaipoo, broadbeans and this experience of cooking is awesome.
Karamani Payaru Masala | Yard Long Beans Masala, is my third daughter-in-law's recipe. I used to make poriyal or poricha kuzhambu with Karamani Payaru, but for the first time when my daughter-in-law prepared this yummy masala, our whole family was happy to taste this delicious dish. This dish can be either served with Chapati / Roti or we can also mix this yummy masala with hot steaming rice!
Sago Idli | Sabudana Idli | Jevvarasi Idli, a very scrumptious and a different variety of Idli for a wonderful breakfast. Whenever I feel bored of preparing the traditional Idli batter, I would go for either Rawa idli, Oats Idli or Sabudana Idli. They are my favourite Idli varieties. Sago Idli are very delicious and very soft. We can serve this sago idli with Sambar or any chutney. My favourite is serving Sago Idli with Gun Powder(Idli Milagai Podi).
