Method:

  1. Pluck the leaves of manathakkali keerai and put it in a big broad vessel. Add lots of water to the bowl and soak the leaves and leave it for 10 minutes. The sand particles gets settled in the bottom of the vessel. Slowly and gently remove the leaves that are floating at the top without stirring the water. Again repeat the process till we are sure there are no sand particles.

  2. Bring 2 cups of water to boil in a sauce pan and add 2 cups of washed keerai to the pan. To this add sugar, crushed cumin seeds and sliced shallots. Allow all of them to cook in medium flame for 10 minutes. When the keerai is half-cooked, add salt and stir well

  3. Meanwhile, take grated coconut in a mixer and add 1/4 cup of water and grind it. Then using a strainer, squeeze out the milk from the ground coconut paste.  Repeat this step again to get another set of coconut milk. Now our coconut milk is ready

  4. Unlike, other greens, manathakkali keerai takes more time to cook. So be patient till it is cooked and then add the coconut milk and switch off the flame

  5. Serve this Manathakkali Keerai saru as a soup!!!
