Ingredients for Masala:
Coriander Seeds1 tablespoom
Fennel seeds1 teaspoon
Red Chilli2
Peppercorns1/2 teaspoon
Cumin Seeds1/2 teaspoon
Cinnamon Stick 1 inch piece
Cloves4
Cardamom3
Poppy Seeds1 teaspoon
Grated Coconut2 tablespoon
Chopped Ginger1/2 teaspoon
Garlic cloves2


For Gravy:
Onion1 bigsize
Green Chilli1
Mixed Vegetables (carrot, peas,beans,capsicum,potato etc)2 Cups *
Turmeric powder1/2 teaspoon
SaltTo taste
Oil1 tablespoon
Butter 2 tablespoon
Chopped Coriander Leavesfew
* 1 Cup = 250ml

Method:
  1. Heat a pan and add all the grinding ingredients except coconut and dry roast them till all the whole garam masala is nicely roasted. Take the roasted ingredients in the mixer jar. Again place the pan on the flame and dry roast the coconut and take it to the mixer jar
  2. Add garlic and ginger and grind them all to a smooth paste by adding little water. Keep the ground paste aside
  3. Heat a heavy bottomed pan, addoil, when the oil is hot, add onions and chopped green chilli and saute the onions till they are translucent
  4. When the onions are sauted well, add butter and then add the mixed veggies and stir-fry in hight flame for couple of minutes
  5. Then add turmeric powder and salt and mix well. Add the ground paste and also add1.5 cups of water and mix everything well. Switch off the flame and take this gravy to the vessel and pressure cook it allowing for 3-4 whistles.
  6. After pressure is released, take out the cooked Saagu and garnish with fresh coriander leaves
  7. Serve the delicious and healthy Mixed vegetable Saagu with Roti, Set dosa or poori and enjoy the dish!
