Panchamel dal is a traditional dal variety from Rajastani Cuisine. It is Protein rich dish as we need to concoct 5 different dal along with Indian Spices. This is one of the no onion no garlic dal. 5 different days such as whole green moong, toor dal, channa dal, masoor dal and split urad dal are soaked for few hours and then pressure cooked and concocted with tomato based spice masala. A wonderful healthy accompaniment for any Indian flat bread like roti, naan, kulcha and also nice with jeera rice and other rice varieties.

Ingredients:
Bengal Gram Dal1/4 Cup*
Masoor Dal1/4 Cup
Whole Green Moong Dal1/4 Cup
Thoor Dal1/4 Cup
Split Urad Dal1/4 Cup
Tomato3
Coriander Powder1 teaspoon
Red Chilli Powder1 teaspoon
SaltTo taste
Turmeric Powder1/4 teaspoon
Coriander Leaves  1/4 Cup

* 1 cup = 250ml
For Grinding:
Ginger1" piece
Green Chilli2

For Seasoning:
Oil / Ghee2 tablespoon
Cumin Seeds1 teaspoon
Red Chilli2

Method:
  1. Take a mixing bowl and add all the dals. Soak the days in water and set it aside for 2 hours. After 2 hours drain the water and add turmeric powder, salt and fresh water and pressure cook allowing for 3-4 whistles. After the pressure is fully released, take out the cooked dal and set it aside
  2. Take ginger & green chili in mixer jar and grind it to a paste and set it aside
  3. Heat oil in a pan, add cumin seeds and allow it to sputter. Then add broken red chili. 
  4. Then add ginger-green chili paste and saute for few seconds
  5. Add coriander powder and red chili powder and saute in oil for few seconds. Then add chopped tomatoes along with little salt and cook the tomatoes till the oil oozes out of the masala
  6. Then add cooked dal and mix everything well. Adjust salt it needed. Cook the dal for another 2 minutes and then garnish with coriander leaves
  7. The delicious and healthy Panchamel Dal is ready!
