  1. First lets prepare the dough. In a mixing bowl, add maida, salt, turmeric powder, 1 tablespoon oil and mix everything well. Add water little by little and knead it to a smooth dough. If the dough is little sticky, add a teaspoon of oil again and knead it well. Cover it and set it aside for 30 mins
  2. Meanwhile lets prepare the filling. I have take 3 large sweet potatoes. Wash the sweet potato and pressure cook it allowing for 3-4 whistles. Peel and Mash the cooked sweet potato and set it aside
  3. Also in a vessel, take 1/4 cup green moong and add water and pressure cook along with the sweet potato. Mash the cooked green moong and set it aside
  4. Heat a pan. Add grated jaggery along with 1/4 cup water. Allow the jaggery to melt. Switch off the flame
  5. Strain the jaggery juice in another pan. Add mashed moong, sweet potato and grated jaggery and mix well
  6. Add cardamom powder and keep stirring the filling till it becomes thick without any moisture. Take this filling aside. Allow it to cool and then make lemon sized balls out of this filling
  7. Now, take the maida dough, make lemon sized balls out of the dough. Take a zip lock or plastic cover. Grease it with little oil. Also grease your fingers with oil. Place a dough ball on the zip lock and spread it to make a small circle.
  8. Place the filling ball in the center and close it to seal the filling inside the dough. Again using greased fingers gently spread the dough without squeezing the filling and roll it to a thin poli
  9. Repeat the same with rest of the dough and filling
  10. Heat a tawa. Cook each of the rolled poli one by one. Apply ghee and cook the poli in medium flame on both the sides

When do we add the grated coconut? Is it when we are mixing the moong dal and mashed sweet potato with jaggery?
