Ingredients:
Curd1/4 Cup*
Finely Chopped Onion2 Teaspoon
Finely Chopped Red Capsicum2 Teaspoon
Finely Chopped Green Capsicum2 Teaspoon
Finely Chopped Grated Carrot2 teaspoon
Coriander Leaves 1 Tablespoon
Pepper Powder1/2 teaspoon
SaltTo Taste
Dry Oregano Flakes1/4 teaspoon
ButterFor spreading in bread
Bread slices4-6

* 1 Cup = 250ml. If homemade curd is not thick, then adjust the curd quantity accordingly.

Method:
  1. Take curd in a clean white cotton cloth or muslin cloth and Make a knot and hang it just above your kitchen sink, so that the whey drips to the sink. Leave it aside overnight or for a minimum of 4 hours. 
  2. Next day, open the knot and hung curd will be ready. It will be thick. Take the hung curd in a bowl. Add onion, red capsicum, green capsicum,carrot and coriander leaves. Mix ever thin well. 
  3. Add pepper powder, salt and oregano flakes. Again using a spoon to mix well. 
  4. Now the Hung curd Veg Spread ready! Take 2 slices of bread. In one slice, spread 2 teaspoon of hung curd veg mixture. Take other bread and apply butter on one side and keep the butter applied side on top of the other bread. 
  5. Heat up the sandwich maker or panini maker, keep the bread slices and cook till the bread becomes light brown and the maker shows ready sign
  6. Take out the crispy Hung Curd Veg Sandwich and cut diagonally and serve with ketchup 
  7. Delicious Hung Curd Veg Sandwich ready!

Tried this with Ricotta cheese + few drops of lime juice instead of hung curd. Came out excellent. Very good for school, college lunch. Thanks for posting
