Cauliflower Florets3 Cups*
Onion1, Finely chopped
Tomato1, finely chopped
Turmeric Powder1/2 Teaspoon
Coriander Powder1 Tablespoon
Red Chilli Powder 1 teaspoon
SaltTo taste
Coriander LeavesTo Taste

* 1 Cup = 250ml

For Seasoning:
Oil2 Tablespoon
Mustard Seeds1 Teaspoon
Curry LeavesFew
Ginger1" Piece, chopped

  1. Bring 4 cups of water to boil. Add turmeric powder and 1/2 teaspoon salt and add the cauliflower florets. Switch off the flame and cover and leave it for 10 minutes. After 10 minutes, drain the water and set the florets aside
  2. In a pan, heat oil. Add mustard seeds and allow it to sputter. Add teared up curry leaves along with ginger and sauté for few seconds. 
  3. Then, add chopped onions and sauté till translucent. 
  4. Then add chopped tomatoes along with turmeric powder and salt and cook till tomatoes are mushy
  5. Then add blanched cauliflower florets and toss well. Add coriander powder and red chili powder and cover and cook in low flame for 5-7 minutes. Do not over cook as the florets are already blanched. 
  6. Finally garnish with coriander leaves and serve the delicious Cauliflower Poriyal with rice or roti

Hi maami.

I made this today for me and my mother. The poriyal was yummy, and I especially love the fact that it is not completely fried. Blanching the vegetables is a wonderful idea that I have never used before. I must rectify that ASAP!

I followed the recipe as you mentioned and the only addition I made was adding 1/2 tsp of homemade Sambhar Powder for that extra kick. I am eating it with rotis at the moment and enjoying every bite. Therefore, I have to thank greatly the chef whose recipe I followed.
