Hara Bhara and Malai Paneer Tikka

Paneer Tikka is a very popular Indian starter. Most of the restaurants specify the Paneer Tikka in their Starter Menu. Also even in many parties or poluck, Paneer Tikka would be a great starter. We can make many variations in making the marination mixture for Paneer Tikka. Here I have given the Hara Bhara (mint-Coriander) Marination and also Malai (Fresh Cream) Marination that would give a good flavour to the paneer. Most of the kids love to devour paneer. This would be the best dish for them!

Ingredients for Hara Bhara Paneer Tikka:
Paneer Cubes1 Cup*
Green Capsicum1/2, Cubed
Coriander Leaves1/2 Cup
Mint Leaves1/2 Cup
Hung Curd1 tablespoon
Green Chilli2
Garlic Cloves3
Ginger1" inch piece
Coriander Powder 1/2 teaspoon
Cumin Powder1/2 teaspoon
Ginger-Garlic Paste1 Teaspoon
Garam Masala1/2 Teaspoon
Red Chilli Powder1/2 Teaspoon
SaltTo Taste
Turmeric Powder1/2 Teaspoon
Oil1 Tablespoon

*1 Cup = 250ml

Ingredients for Malai Paneer Tikka
Paneer Cubes1 Cup*
Onion1/2, Cubed
Hung Curd1 Tablespoon
Fresh Cream4 Tablespoon
Garam Masala1/2 Teaspoon
Pepper Powder1 Teaspoon
SaltTo Taste
Ginger-Garlic Paste1 Teaspoon
Oil1 Tablespoon

Method for Hara Bhara Paneer Tikka:
  1. Take washed coriander leaves, mint leaves, ginger, garlic cloves and green chili and grind everything to a smooth paste
  2. In a mixing bowl, take hung curd, ground green paste, and rest of the other ingredients except oil and stir everything well
  3. Add paneer cubes and green capsicum and coat well with the marination mixture. Cover and keep refrigerated for an hour. We can even leave it overnight. The marination helps all the masala and green paste to get nicely combined with the paneer and capsicum.
  4. After 1 hour, take out the marinated paneer from refrigerator. Take a skewer and make a pattern with paneer and capsicum. Also it is good to start with vegetable and end with vegetable in a skewer so that the paneer would cook nicely in grill. So start with capsicum and alternate with paneer. Prepare the skewers and keep it ready for cooking
  5. In a grill or a tawa, grease little oil. Keep the skewers on the tawa. Sprinkle little oil and cook the paneer on the skewers on all the sides. Frequently flip the skewers to make sure all the sides are cooked and also it is not burnt
  6. Delicious Hara Bhara Paneer Tikka Ready to serve!

Method for Malai Paneer Tikka:
  1. In a mixing bowl, add hung curd, fresh cream, garam masala, pepper powder, salt and ginger-garlic paste and stir well.
  2. Add paneer cubes and onion pieces and mix well to coat with marination. Cover and refrigerate for an hour. We can even leave it overnight. The marination helps all the masala and green paste to get nicely combined with the paneer and onion.
  3. After an hour, take out the marinated malai paneer from refrigerator and in a skewer add onion first and alternate with paneer cube. Prepare the skewers and keep it ready for cooking
  4. In a grill or a tawa, grease little oil. Keep the skewers on the tawa. Sprinkle little oil and cook the paneer on the skewers on all the sides. Frequently flip the skewers to make sure all the sides are cooked and also it is not burnt
