Semiya / Vermicelli 1 Cup*
Onion1, thinly sliced
Tomato1, roughly chopped
Carrot1, chopped
Beans10, Chopped
Green Peas1/4 Cup
Sour Curd2 tablespoon
Turmeric Powder1/4 Teaspoon
Mint Leaves10
Coriander LeavesFew
SaltTo taste

* 1 Cup = 250ml

For Grinding:
Fennel Seeds 1/2 Teaspoon
Garlic Cloves3
Green Chili2
Ginger1" Piece
Cinnamon1" Stick

For Seasoning:
Oil2 Tablespoon
Ghee1 Tablespoon
Cumin Seeds1 Teaspoon
Bay Leaf2
Star Anise 1

  1. Take the grinding ingredients in a mixer jar and grind it to a smooth paste and keep this Biriyani Masala aside
  2. In a sauce pan, dry roast the vermicelli till it becomes light brown and take it aside
  3. In the same sauce pan, add 2.5 Cups of water and bring it to boil. Add a teaspoon of salt and stir well. Add vermicelli and cook it till it is soft. When the vermicelli is soft, drain the water and wash the cooked vermicelli under running cold water to remove the stickiness. Keep this cooked semiya aside
  4. In a pan, add oil and ghee. Add cumin seeds and allow it to sputter. Then, add bay leaf and star anise and saute for few seconds. 
  5. Then add sliced onions and saute the onions till they are light brown. 
  6. Then add Biriyani masala and saute for couple of minutes. Now, add mint and coriander leaves and mix well
  7. Then add tomato, beans, carrot, potato and green peas and saute the veggies in high flame for 2 minutes
  8. Add sour curd, turmeric powder and salt and stir well. Add water and cook the veggies till the vegetables are cooked and they are soft. 
  9. When the veggie are cooked, add the cooked vermicelli and gently toss it so that the vermicelli and the veggies are nicely mixed up. Adjust salt if you need. 
  10. The delicious Semiya Biriyani is all ready to serve!
