Most of us love to make a crispy roast out of this seppangkizhangu. The roast is always nice to have it hot or warm. But if we try to pack it for lunch, it will become less crispy and also will be more dry. But this Seppangkizhangu vathakal is a soft and tasty side dish that goes well with many conventional rice varieties like lemon rice, tomato rice etc and also with conventional sambar/ kuzhambu varieties. Ingredients:
Tara Root (Seppangkizhangu / Arbi)300gms
Turmeric Powder1/4 Teaspoon
Sambar Powder1 Teaspoon
Thick Tamarind Juice1 Tablespoon
SaltTo taste


For Seasoning:
Oil2 Tablespoon
Mustard Seeds1 Teaspoon
Split Urad Dal1 Teaspoon
Curry LeavesFew

Method:
  1. Wash the tara root thoroughly and peel and chop into small cubes and set it aside
  2. Heat oil in a pan. Add mustard seeds and allow it to sputter. Add split urad dal and fry till the dal turns golden brown
  3. Add the chopped tara root and mix well. Add turmeric powder, sambar powder and give a good stir
  4. Then add the tamarind juice along with salt and stir once. Cover the pan with a lid and keep the flame in medium and allow the tara root to cook till it is soft. Stir once during the cooking process making sure the vegetable not to stick to the bottom of the pan
  5. Once the tara root is soft and cooked, open the lid and stir-fry in high flame for 2-3 minutes and the switch off the flame 
  6. The delicious Seppangkizhangu Vathakal is ready to serve!
