Seepu Seedai Recipe

Seepu Seedai Recipe is a traditional yummy snack made with rice flour, dal and coconut milk. A very crunchy and crispy snack usually made during Diwali. Normally for the conventional seedai which we make for Krishna Jeyanthi, we use rice flour, urad dal flour along with ghee and salt and mix with water and make it to a dough and make seedai. The slight change in this Seepu Seedai is we use coconut milk instead of plain water to knead it to a dough. The rolling of seedai into cylinder is time consuming but still worth its effort. Try this crispy and tasty Seepu Seedai!

Ingredients:
Rice Flour2 Cups*
Urad Dal1/2 Cup
Butter1 Tablespoon
SaltTo taste
Thin Coconut Milk1 Cup 
Oil For Deep Frying

* 1 Cup = 250ml

Method:
  1. Fry Dry roast the urad dal till light brown and allow the roasted urad dal to cool down
  2. Take the roasted dal and grind it to a smooth powder
  3. Measure 1/2 Cup of the roasted and ground urad dal powder and sieve it to make sure we use smooth urad dal flour without any lumps. In a mixing bowl, take the sieved urad dal flour along with rice flour, butter, salt and give a good mix
  4. Then add coconut milk little by little and gently knead it to a smooth dough
  5. Take the Seepu Seedai mould and the press. Grease the inner portion of the achu with oil. Add 2-3 fist full of the seepu seedai dough and close the achu with lid.
  6. Take a clean chopping board, squeeze the press and mould and make long strips on the chopping board. Then using a fork, slice the long strips into 2" long small strips 
  7. Then take each small strip and join the ends of the strip to make a cylinder. Repeat the same method for the rest of the dough
  8. Heat oil in a pan. When the oil is hot, drop a pinch of dough to check the readiness of the oil, of the pinch of dough dropped raises quickly in oil, then the oil is ready. Keep the flame in medium and gently drop the seepu seedai which we had rolled earlier in step 7
  9. Deep fry each batch of the seedai till they are golden brown and crispy
  10. The crispy and tasty Seepu Seedai Ready! Store it in air-tight container and enjoy the delicious snack!
