Vegetable Fried Rice Recipe

Mixed veggies like beans, carrot , capsicum, cabbage and spring onions are finely chopped and sautéed in high flame till they are almost cooked and then combined with cooked fluffy rice along with pepper powder, salt, and soy sauce. Ingredients:
Mixed Veggies (Beans, Carrot,Cabbage,
Capsicum, Spring Onions)
1/2 Cup each*
Chopped Ginger1 Teaspoon
Chopped Garlic1 Teaspoon
Cooked Rice2 Cup
Soy Sauce1/4 Teaspoon
Vinegar1/4 Teaspoon
Pepper Powder2 teaspoon
Salt To taste
Olive Oil2 Tablespoon

* 1 Cup = 250ml

Method:
  1. Heat olive oil in a pan. When the oil is hot, add chopped ginger and garlic and sauté for few minutes
  2. Then add green beans, carrot, cabbage, capsicum and spring onions one by one and sauté the veggies in high flame
  3. Add a pinch of salt for the veggies, and keep sautéing the veggies in high flame. 
  4. When the veggies are almost cooked, i.e 90% cooked but still little crispy, then add cooked rice and gently toss to mix the veggies 
  5. Add soy sauce, vinegar, salt and pepper powder and toss them to mix all the veggies with the cooked rice
  6. The delicious Vegetable Fried Rice is now ready to serve!
