Mixed Vegetable Curry Recipe

Delicious and tasty North Indian style fried mixed vegetable Curry would be a perfect side dish for Roti / Naan. Mixed veggies enrich the curry and also makes it healthier and tastier. Sometimes its hard to make kids eat veggies, but this masala curry is so yummy that kids would love to devour more and more.

Ingredients :
Carrot1, Cubed
Chopped Green Beans1/4
Potato2, Cubed
Capsicum1, Cubed
Green Peas1/4 Cup
Paneer 250 gms, Cubed
Onion1, Finely Chopped
Tomato2, Cubed
Cashew2 Tablespoon
Ginger-garlic Paste1 Tablespoon
Coriander Powder2 teaspoon
Cumin Powder1 Teaspoon 
Red Chilli Powder1 Teaspoon 
Turmeric Powder1/4 Teaspoon
SaltTo Taste
Kasoori Methi1 Teaspoon
Fresh Cream1/4 Cup
Coriander LeavesFor Garnishing
Butter6 Tablespoon
Oil2 Tablespoon

  1. Heat 3 Tablespoon of Butter in a pan. Add carrots, potatoes and green peas and saute the veggies in medium flame till the veggies are tender
  2. Once the veggies are tender and soft, add capsicum and green peas and cook for 2-3 minutes and then take these sautéed veggies aside
  3. In the same pan, add the oil and add onions. Sauté the onions till translucent
  4. When the onions are translucent, add tomatoes and cashews and cook them till the tomatoes are mushy
  5. Cool the onion-tomato mixture and then grind it to a paste in a mixer
  6. Again heat the remaining butter in a pan. Add the ginger-garlic paste and cook for a minute. 
  7. Then, add the onion-tomato-cashew paste and cook in low flame for a minute
  8. Then add red chili powder, coriander powder, cumin powder and turmeric Powder and salt and stir well
  9. Add cooked veggies, paneer and mix everything well
  10. Crush the kasoori methi and add it to the gravy and mix well
  11. Add fresh cream and switch off the flame
  12. Finally garnish with coriander leaves and serve hot!
