Carrot Halwa (Gajar Ka Halwa) , One of the most popular Indian dessert, very tasty and mouth-watering. Conventionally, making carrot halwa is time consuming and it has a rich taste of milk. But adding mawa speed up the process. We are going to cook the carrots in very little milk and enrich with mawa. Adding mawa not only enhances the flavour and speed up the process but also makes the halwa thicker and so tasty. Try this quick and easier method of making Carrot Halwa (Gajar Ka Halwa) with Khoya and enjoy this delicious dessert!

Ingredients:
Grated Carrot **2 Cups*
Milk1 Cup
Sugar1/2 Cup
Cardamom Powder1/2 Teaspoon
Mawa / Khoya1/2 Cup
Ghee 4 Tablespoon
Almonds, Pistachios and CashewsFor Garnishing

* 1 Cup = 250ml
** I have grated 6 big carrots to get 2 cups of carrot

Method:
  1. Heat a tablespoon of ghee and add carrots and saute the carrots in ghee for 3-4 minutes

  2. Cover the pan with a lid and steam cook the carrots till they are soft

  3. Then, add a cup of milk and stir well. Let the carrots gets cooked with the milk till all the milk are completely absorbed

  4. When the milk is fully absorbed, add sugar and cardamom powder. Adding sugar again dilutes the halwa mixture. 

  5. Keep stirring in regular intervals till the halwa mixture becomes thick. Add mawa / Khoya and mix well. Adding khova not only makes the halwa thicker but also enhances the flavor and speeds up the whole process

  6. Add 2 tablespoon of ghee and stir well. Let the ghee gets incorporated with the halwa. Then add another tablespoon of ghee and keep the flame low till the halwa comes as a single mass rolling without sticking to the sides of the pan. If we take a little halwa mixture and rolls into a ball, then that is the correct consistency

  7. Finally garnish with slivered Almonds and Pistachios. We can add raw cashews or we can ghee roast the cashews and add it to the halwa and mix everything well 

  8. Serve the delicious Carrot Halwa (Gajar Ka Halwa) warm or even as a topping in vanilla ice cream and enjoy this rich and delightful dessert!
