Almond Butter Cookies
Today at last I made decent Almond Butter Cookies after few attempts and they turned out crispy and yummy! The taste is so delicious and for each bite, the crumbled almonds gives more flavour.

Ingredients:
All purpose flour / Maida | 1 Cup** |
Butter* | 3/4 Cup |
Sugar | 3/4 Cup |
Baking Powder | 1/2 teaspoon |
Baking Salt | 1/4 teaspoon |
Almonds | 1/4 Cup |
** 1 Cup = 125 ml
* Butter should be at room temperature

Method:
- Preheat the oven at 180 degree C
- Take the butter and sugar in a bowl . Using a whisk, mix them both well till you get them fluffy
- Dry roast the almonds for 2 minutes and then take it in a mixer and grind it coarsely
- Take all purpose flour, baking powder and baking salt in a bowl and sieve them so that the baking powder and baking salt are mixed nicely with the all purpose flour. Add these to the butter-sugar mixture along with the grounded almond and mix them well to make a dough
- Then take small lemon sized balls and press it lightly in the middle and place it in a baking tray lined with foil. Leave at least 1 to 2 inch gap between the each cookie pieces as they well get flattened in the oven. Do not populate the baking try. Bake the cookies in batches. Bake it in the oven for 12-14 minutes. When it is 10 minutes, just stand in front of the oven and see if the edges has changed to light brown colour. For me it took 12 minutes to get to this stage. When you see the cookies gets flattened and colour of the cookies changes to light brown colour, then using oven safe glove, remove the baking tray and allow the tray to cool off. Do not press the cookies at this stage as they will still be soft. Only after cooling off completely, the cookies will becomes harder. Then slowly and gently take the cookies from the baking tray and line it up on the wire plate to cool off completely.
- After 15 minutes, when you touch the cookies, they would have become harder enough. Munch the crunchy and crispy Almond Butter Cookies!!!

Aunty, I am new to baking, so much used to our Tamil cooking. May i ask how to pre-heat the oven ? Should the door be kept open ? Thanks for your help 🙂
Hi, Most of the latest ovens is highly sophisticated. You have to just switch on and no need to keep the door open. After nearly 15 minutes, there will be an indicator or beep sound which indicates that the oven is ready for baking. I use a old oven which do not have any indicator or beep. so i just switch on and keep it on for 15 minutes then i will use it for baking. Hope this helps you. You need to read the instruction manual of the oven to understand its functionality.

My 3 year old is a great fan of the fancy mommy cartoons who bake along with the kids. They show it in a lot of the US cartoons here. She has been asking me to bake cookies at home since the last couple of months. Since my last failure with them I wasn't too motivated to try at home & kept buying from the store which made her very unhappy. This weekend she happened to be so well behaved I thought I'll give her a surprise treat & we both started to bake together. She helped a lot with the whisking. Honestly these were the best cookies I've tasted in my life! Thank you very much for sharing the recipe. There is a big smile on my daughter's face!
