
Aval Payasam is an easy to make kheer and it so delicious with a rich flavor of thick milk. Aval (Poha) is a healthy grain. For most of the auspicious occasions and also during vrat days, this is one ingredient that is widely used. This is one of the basic version of payasam made just using milk, poha and sugar. We can further enhance the taste of the kheer using condensed milk and almond paste if required.

Is Red Poha more healthier?
Red poha is made from red rice. First the red rice is parboiled, pounded to remove the husk which makes the rice flat. Then the flattened rice flakes are dried, packaged.red rice is not highly processed and retains its bran layer, which makes it healthier than regular white rice. Red rice is rich in fibre, vitamins, minerals, and antioxidants. The red poha recipes taste no different than the typical poha. So we can use more of red poha in place of the regular white poha as a healthy choice!

Aval Payasam, an easy to make kheer with Aval (Poha), Milk and Sugar. This is a very basic version of the kheer without any addition of badam powder, condensed milk, etc., Very easy and quick to make.

Ingredients
- 1 cup Aval / Poha / Flattened Rice Red Poha preferably
- 1 Liter Milk whole milk preferably
- ½ cup Sugar
- ¼ teaspoon Cardamom Powder
- 3 tablespoon Cashews
- 2 teaspoon Ghee (Clarified butter)
- 1 cup Water
Instructions
Powder the Aval / Poha / Flattened rice Poha
- Heat the heavy bottomed pan. Add 1 teaspoon of Ghee. Add red poha and fry in low flame for 2 minutes in a medium flame.2 teaspoon Ghee (Clarified butter), 1 cup Aval / Poha / Flattened Rice
Cooking Kheer
- Pour 1 litres milk in a heavy bottomed pan. Now add 1 cup of water and allow the aval to cook for 2 minutes.1 Liter Milk
- To this add 1 liter of milk. When the milk starts to boil, reduce the flame and allow the milk to cook for about 10 minutes.1 cup Water
- When the milk starts to thicken, add the sugar and stir it well.½ cup Sugar
- Allow the mixture to boil for 5 minutes and then remove it from flame. To this add cardamom powder and stir well.¼ teaspoon Cardamom Powder
Garnishing
- Heat ghee in a pan. Add cashews and fry till the cashews become light golden brown.2 teaspoon Ghee (Clarified butter), 3 tablespoon Cashews
- Add this roasted cashews to the Aval Payasam.
Serving
- The delicious Aval Payasam is now ready to serve!!!
Notes
- Red Poha - Try to use red poha (sivappu aval) which gives a nice light pink color to the payasam. If you don't have red poha use regular white poha. But make sure that the thick variety of the poha is used.
- Whole Milk - Always try to use whole milk for making payasam (kheer).
- Use broad/bigger Vessel for cooking the milk to avoid overflow/spill over.

Method :
- Heat some ghee in pan, and add broken cashew nuts. Fry the cashews till it turns golden brown color. Take the fried cashews in a plate and keep it aside
- Now add the aval and fry the aval in ghee for a couple of minutes. Now add 1 cup of water and allow the aval to cook for 2 minutes
- To this add the milk and let the mixture boils for 10 minutes in a low flame. When the milk starts to thicken, add the sugar and stir it well.
- Allow the mixture to boil for 5 minutes and then remove it from flame. To this add fired cashews and cardamom powder and stir well.
- Now the mouth-watering Aval Payasam is ready to serve.
