
Badam Chiroti | Padhir Peni, is a traditional Sweet Variety our older generations use to make. Some of the sweets that our earlier generations were making are quite complicated and time consuming. In today’s world, most of the women are working and with work and home, they sometimes find difficult to try and make traditional sweets. Originally this is a native dish of Karnataka, but adopted widely in Tamil Nadu. This chiroti is served in wedding functions in Karnataka. Its an extremely tasty dish, served as dessert.
The main two ingredients are Maida and Sugar. Maida rotis are prepared first and then layer them up and cut them into discs and press it to make patties. Deep fry the patties till they are golden brown. This is the first part. The next part is preparing the sugar syrup. We don’t need any consistency for sugar syrup. The syrup needs to be sticky.
Instead of a plain Chiroti, I have added badam (Almonds) to make it even more tastier. So, first step for us is to soak the almonds and peel the skin and grind it to paste. This badam paste is added to maida and kneaded to a dough. Adding badam really enhances the flavor. The procedure is time consuming and but not complicated. Variations for making Badam Chiroti:
- Instead of maida, we can use chiroti rava.
- Instead of sugar syrup, we can just add powdered sugar on the hot deep fried chirotis'
- Or we can prepare badam milk instead of adding badam in the flour. Soak the deep fried chirotis' in badam milk.

Badam Chiroti | Padhir Peni
Equipments Needed
- 1 Mixing Bowl
- 1 Mixer Grinder
- 1 Sauce Pan
- 1 Heavy Bottomed Pan
Ingredients
- 1½ cups Maida (All Purpose Flour) 1 Cup - 250ml
- ½ cup Almond
- ¼ cup Ghee (Clarified butter)
- 1 tablespoon Rice Flour
- 1½ cups Sugar
- 3 Cups Oil
- 1 tablespoon Lemon Juice
Instructions
Soak Almonds
- Wash and soak almonds overnight. Or we can add hot water and soak for 30 mins. After 30 mins peel the skin of each soaked almond.½ cup Almond
Grinding Almond
- Add the peeled almond to the mixer jar and grind it to a smooth paste. I have used water to make it to a paste. We can also add milk and make it to paste.
Making Dough
- In a mixing bowl, add maida, badam paste and mix well. Add water little by little and knead it to a smooth dough. Now cover and set this dough aside.1½ cups Maida (All Purpose Flour)
Preparing Sugar Syrup
- Take 3 cups of water in a sauce pan and add sugar to it. Bring it to boil and keep in flame till the sugar syrup is sticky. Once the sugar syrup is sticky in consistency switch of the flame.1½ cups Sugar
Prepare Rice Flour Paste
- In a mixing bowl take the ghee and rice flour and mix well to make like a paste.1 tablespoon Rice Flour, ¼ cup Ghee (Clarified butter)
Making Chiroti Patties
- Now take the dough and knead well again. Take gooseberry size balls out of the dough and using a rolling pin roll it to a small and thin roti. Make 5-6 roti for one batch and repeat the step for rest of the dough.
Making Layers
- Now in one roti brush the rice flour paste all over the top of the roti. Then place another roti on top of the ghee brushed roti. The same way brush the top roti and place another roti on top of it. Repeat the same for 6 roti.
- Roll the layered roti tightly and using a sharp knife slice it to pieces. Take each slice and press it to make like a patti.
Frying Chiroti
- Heat oil in a heavy bottomed pan. Deep fry the Chiroti patties in hot oil and fry them in both the sides til they are golden brown and crispy.3 Cups Oil
Sugar up Fried Patties
- Drop each batch of fried Chiroti patties in the warm sugar syrup and allow it to get soaked for 5 mins so that it can absorb the sugar syrup. The Sugar syrup should be warm before adding the fried Chirotis'. Also to avoid crystallization of sugar syrup we can add a tablespoon of lemon juice.1 tablespoon Lemon Juice
Serving Time
- Serve the delicious crispy and sweet Badam Chiroti and enjoy the traditional sweet!
