Method:

  1. Wash & Cut the buds off the stalk. Any surplus stem is cut away and any loose surface leaves are peeled and discarded. Quarter each one of the sprouts and set that aside
  2. Take cashews in a bowl, add milk and set it aside soaking for 30 minutes. After 30 minutes, grind everything to a smooth paste
  3. Take chopped tomatoes, ginger, garlic, fennel seeds in a mixer jar and grind everything to a smooth paste.
  4. Heat oil in a pan. Add cumin seeds and fry for a minute. Then add chopped onions and saute in oil till they are transparent.
  5. Then add the ground tomato and allow the masala to cook nicely till the raw smell of the ground paste goes off. Add garam masala, coriander powder and mix well
  6. Then, add the ground cashew paste and give a good mix. Then, add the chopped sprouts and give a good stir. Adjust the consistency of the gravy by adding 1 cup of water
  7. Add salt and mix well. Allow the gravy to boil in medium flame for about 10 minutes so that the masala gets nicely incorporated with the sprouts.
