Capsicum Peanut Masala Curry

Capsicum Peanut Masala Curry is a very simple and easy to make yet very delicious Indian Vegetarian Gravy. It is a perfect accompaniment for roti/ naan. Capsicum cooked with onion-tomato masala is enriched with coarsely ground peanuts makes this an awesome dish. Most of the restaurants serve the standard gravies like Chole masala, paneer dishes, dal etc, but these are some interesting dishes which are unique and we would get nice appreciations from our family!

Ingredients:
Capsicum 2, cubed
Onion 1 big, finely chopped
Tomato 1, finely chopped
Roasted Peanuts 1/4 Cup
Ginger 1″ Piece
Curry Leaves few
Turmeric Powder 1/4 teaspoon
Red Chilli Powder 1 teaspoon
Coriander Powder 1 teaspoon
Cumin Powder 1/2 teaspoon
Coriander Leaves 1 Tablespoon
Salt To Taste
Oil 2 Tablespoon
Mustard Seeds 1 Teaspoon
Cumin Seeds 1 teaspoon

Method:

    1. Take the roasted peanuts in a mixer jar and grind it to a coarse powder
    2. Heat oil in a pan. Add mustard seeds and allow it to sputter. Add cumin seeds
    3. Then add ginger and curry leaves and fry for few seconds
    4. Now, add chopped onion and saute the onions till translucent
    5. When the onions become translucent, add tomato to the pan
    6. Add turmeric powder, coriander powder, red chili powder and cumin powder along with salt.
    7. Cook the tomato till mushy. Then, add capsicum pieces and stir-fry for couple of minutes.
    8. Add coarsely ground peanuts and stir well. Add water to make it to gravy consistency
    9. Cover and cook for couple of minutes and then garnish with coriander leaves
    10. The delicious Capsicum Peanut Masala Curry ready!
