  • Don't overcook the rice: Cook it according to package instructions or until al dente for a perfect texture.
  • Use fresh, brightly colored carrots: These offer the best flavor and texture.
  • Grate the carrots finely: This allows them to cook evenly and distribute flavor throughout the rice.
  • Sauté the grated carrots briefly: This helps bring out their sweetness and adds a slightly different texture compared to completely cooked carrots.

Ingredients

  • 2 Cup Cooked Rice 1 Cup - 250ml
  • 1 Onion Finely Chopped
  • 200 grams Carrot
  • ¼ teaspoon Turmeric Powder
  • ½ teaspoon Sambar Powder
  • 1 teaspoon Salt Adjust As Needed
  • 1 tablespoon Coriander Leaves

For Tempering

  • 1 tablespoon Cooking Oil
  • 1 tablespoon Ghee we can use oil too
  • 1 teaspoon Mustard Seeds
  • 1 no Green Chili slit
  • 1 sprig Curry Leaves
  • 1 teaspoon Split Urad Dal
  • 1 teaspoon Split Bengal Gram (Channa Dal / Kadalaparuppu)
  • 2 tablespoon Cashews (or Peanuts)

Instructions 

  • Grate the 200 grams Carrot and set it aside. Finely chop 1 Onion and have it ready.
  • Heat 1 tablespoon Cooking Oil in a pan, adding 1 tablespoon Ghee for extra flavor. Once hot, add 1 teaspoon Mustard Seeds and let them sputter.
  • Add 1 teaspoon Split Urad Dal, 1 teaspoon Split Bengal Gram (Channa Dal / Kadalaparuppu) and 2 tablespoon Cashews in the oil. Mix well and fry until the dals turn light brown.
  • Next, add 1 no Green Chili and 1 sprig Curry Leaves, and stir well to combine.
  • Add the chopped onion and cook until translucent, stirring occasionally.
  • Once the onion is cooked, add the grated carrot and mix well. Season with ¼ teaspoon Turmeric Powder, ½ teaspoon Sambar Powder and 1 teaspoon Salt. Cook, stirring occasionally, until the carrot is softened through.
  • Once the carrot is softened through, turn off the heat. Gently fold in 2 Cup Cooked Rice with a spatula. Mix until the rice is evenly coated with the carrot masala. Garnish it with chopped 1 tablespoon Coriander Leaves
  • The yummy Carrot rice is ready to serve.

Method with Step by Step Pictures:

  • Heat the oil in a pan, adding a teaspoon of ghee for extra flavor. Once hot, add the mustard seeds and let them sputter.

  • Add split urad dal, channa dal, and cashews to the oil. Mix well and fry until the dals turn light brown.

  • Next, add the green chili and curry leaves, and stir well to combine.

  • Add the chopped onion and cook until translucent, stirring occasionally.

  • Once the onion is cooked, add the grated carrot and mix well. Season with turmeric, salt, and sambar powder. Cook, stirring occasionally, until the carrot is softened through.

  • Once the carrot is softened through, turn off the heat. Gently fold in the cooked rice with a spatula. Mix until the rice is evenly coated with the carrot masala.

  • The yummy Carrot rice is ready to serve.
