Carrot Rice is very delicious rice variety. This Carrot rice is a way to make our kids love healthy carrots. Its a perfect Kids Lunch Box Recipe.
Carrots can be eaten in the variety of ways. The simplest way is raw as carrots are perfectly digestible without requiring cooking. Carrots are excellent for the eyes and it contains large quantities of vitamin A, in the form of beta carotene. It is also good for skin. It will improve the overall health of you and your child, and increase immunity. In fact, two carrots a day can increase your immunity by as much as 70%! Here is the recipe made of Carrot which can made easily and quickly and also very good for health.
Though carrots have immense nutritional values, sometimes kids or even some of the adults don’t like to have carrots.There are lots of yummy recipes with carrot which we can make to trick kids have the healthy carrot. This Carrot Rice is one of the way to make the kids eat the carrot happily.

Equipments Needed
- Heavy Bottomed Pan

Ingredients
- 1 Cup Cooked Rice 1 Cup - 250ml
- 1 Onion Finely Chopped
- 1 Cup Grated Carrot
- ¼ tsp Turmeric Powder
- ½ tsp Sambar Powder
- 1 tsp Salt Adjust As Needed
- 1 tbsp Coriander Leaves
For Tempering
- 2 tbsp Ghee We can use oil too
- 1 tsp Mustard Seeds
- 1 tsp Cumin Seeds
- 1 Green Chili Chopped
- Few Curry Leaves
- 1 tsp Split Urad Dal
- 1 tsp Split Bengal Gram (Channa Dal / Kadalaparuppu)
- 2 tbsp Peanuts
Instructions
Preparing Ingredients
- Peel the carrot and grate it. Keep the grated carrot aside
- Chop the onions and green chilies finely. Keep it aside
Tempering Process
- Heat the oil/Ghee in the pan and add mustard seeds. When the mustard seeds start to sputter, add cumin seeds, split urad dal, channa dhal and peanuts and fry until the dhal becomes golden brown color
- Now add the chopped curry leaves and green chili and fry for few seconds.
Preparing Carrot-Onion Masala
- Then add the chopped onions and fry it until the onion becomes transparent
- When the onions are sautéed , then add the grated carrot along with a pinch of turmeric, salt and sambar powder and fry them until the carrot is cooked completely. switch off the flame.
Mixing with Rice
- Add the cooked rice and mix it gently without breaking rice. Finally garnish with coriander leaves!
- The yummy Carrot rice is ready to serve.

Notes
- We can dry roast coriander seeds, bengal gram and red chili and dry roast till golden color and then grind it to powder. We can add this spice powder to the carrot masala instead of sambar powder

PREPARING INGREDIENTS

sirukilangu can be made in another method also. we can cook the kilangu in cooker ,peel the skin. Next pour little oil in kadai,add mustard , udad dal,hing, curryleaves, ginger, green chillies chopped. Then add the boiled kilangu fry for sometime, then add grated coconut. This tastes different.
I would like to thank you for simple steps of cooking. I cooked for my mother. Being a male this is a milestone. My request to add Hyderabad veg Britannica it list. Thank you.
