ChickPeas combined with spices and crunchy vegetables tossed with lemon juice makes an easy home made salad. Chickpeas salad is easy to make salad and that too very quickly. It's perfect for the snack box since chickpeas are protein packed.
Chickpeas is a nutrition rich pulses which are high in protein and fiber and low in calcium. For Balanced diet, we need to take more protein rich food and this chickpea salad is one dish which is so healthy. Always it is good to have some salad or sprouts around 11am or 4pm. This Chickpeas Salad is a good option as part of balanced diet. Protein rich chickpeas are served with rice veggies along with dressing. Dressing is optional. We can just garnish with pepper powder and lemon juice. A Very stomach filling salad with balanced nutrients.

Ingredients
- 1 cup Chickpeas (Kondakadalai) 1 cup = 250 ml
- 1 tsp Dry Mint Leaves Powder
- 1 tsp Red Chili Powder
- 1 tbsp Roasted Cumin Powder
- To taste Salt
- ½ cup Cucumber finely chopped
- ¼ cup Green Capsicum finely chopped
- ¼ cup Red Capsicum finely chopped
- ½ cup Onion finely chopped
- ¼ cup Spring Onion Leaves finely chopped
For Dressing
- 2 tbsp olive oil
- 1 tsp Mint Leaves
- 1 tbsp Lemon Juice
- 1 tbsp Pepper Corns crushed
Instructions
- Wash and soak the chickpeas in water and leave it soaking for 12 hours or overnight.
- Next morning, drain water and add chickpeas to pressure cooker
- Add fresh water and salt and pressure cook the chickpeas allowing for 6-7 whistles. If you have excess water in the cooked chickpeas, drain the water and set the cooked chickpeas aside
- Take a big mixing bowl. Add cooked chickpeas. Now, add red chili powder, roasted cumin powder and dry mint leaves powder and mix well. Set this aside. We can just refrigerate this mixture we are ready to serve.
- Just before serving, warm up the chickpeas mixture. Add chopped cucumber, green and red capsicum, onion and spring leaves and give a good toss
- In a bowl, add oil, mint leaves, lemon juice and crushed peppercorns and stir well. Add this dressing to the salad.
- Serve the delicious and healthy Chickpeas Salad! A great party starter too!

Notes
- You can replace the fresh soaked chickpea with boiled canned chickpea available in the market to make instant salad. Wash them multiple times and then use it.
- Feel free to add other toppings like cheese or other proteins

Method to make Chickpeas salad:
