Eggless Red Velvet Cake Recipe | Red Velvet Cake with Beetroot Recipe

Red Velvet Cake, a cake with red color or red-brown color. It is traditionally prepared as a layered cake with cream cheese topping. Beetroot or red food color is added to get the dark red color in the cake. A moist Red Velvet cake is a perfect dessert for a festive mood. As valentine's Day is approaching, I thought this recipe would be useful. This is an eggless version. But still we get the same moist and spongy cake and with the cream cheese frosting and sugar sprinklers, this would be really an awesome dessert.

Ingredients for Cake:
Beetroot Puree ¾ Cup
All purpose Flour 1.5 Cup
Cocoa Powder 2 tablespoon
Salt ¼ teaspoon
Baking Powder 1.5 teaspoon
Milk ½ Cup
Distilled White Vinegar 1 tablespoon
Oil ½ Cup
Granulated Sugar 1 Cup
Vanilla Extract 1  teaspoon
Sugar Sprinklers For decorating
Heart Confetti For decorating

Ingredients for Frosting:

Cream Cheese 8oz Packet
Butter at room temperature  1 Stick or 50gms
Vanilla Extract 1 teaspoon
Powdered Sugar 1 Cup
Eggless Red Velvet Cake Recipe | Red Velvet Cake with Beetroot Recipe

Method for making Cake:
  1. First take 2 medium size beetroots, wash and pressure cook along with the skin. Allow 3-4 whistles. Then take out the cooked beetroot, peel the skin, chop it and add it to the mixer jar and grind it with ¼ cup of water and take ¾ cup of beetroot puree and set it aside
  2. Pre-heat the oven to 350 Degrees F.
  3. First let take the dry ingredients. Add flour, baking powder, salt, cocoa powder and pass it through the sieve and set that aside
  4. In another bowl, add milk and vinegar and stir well and set this aside for 5 minutes. 
  5. Meanwhile, in another mixing bowl, add oil, sugar and beat well.
  6. Then add the beetroot puree and stir well. Then add vanilla extract and give a good stir. Add milk+vinegar mixture and stir well
  7. Finally add the dry ingredients little by little and mix well with a flat spatula or whisk gently. Do not beat it. Fold all of them gently till they are nicely combined 
  8. Take a cake tin and grease it with butter and dust it with flour
  9. Then add the cake batter which we prepared and pat it gently to get rid of air bubbles.Bake it in Oven for 30 minutes till the skewer comes out clean.
  10. Take out the baked cake, cool for 5 minutes then loosen the edges and flip it on the cooling rack and allow it to cool completely

Method for making Frosting:

  1. In a mixing bowl, add cream cheese, butter, vanilla extract and beat well with a whisk.
  2. Then add powdered sugar and beat everything well till you get stiff peaks

Method for Applying Frosting:

  1. Take the cooled cake, Slice the cake in half. Remove the upper portion and keep it aside
  2. Apply cream frosting which we prepared generously on the cut portion of cake.
  3. Then place the other half of the cake on this cake. Apply frosting on the top, sides and everywhere. 
  4. Sprinkle the heart confetti, sugar sprinklers all over the cake and decorate the cake
  5. The delicious Eggless Red Velvet Layered Cake is all ready! A very delicious dessert is now ready!
