Gulab Jamun Recipe | Gulab Jamun with Khoya (Mawa)
Gulab Jamun is a traditional and popular dessert variety of India. For Diwali and many other occasions, we tend to make this delicious dessert. Gulab Jamun are simple and easy to make. Most of us have the habit of getting ready mix for Gulab Jamun. But making Jamun using store bought Khoya is one of the quickest method and also the Jamun will be really really soft and delicious. Some of us make Khoya at home which we can use it for making soft Jamun. In this video, I have used store bought Khoya which I brought it to room temperature and crumbled it and then used with maida to make soft and yummy Jamun. Try this method of making Gulab Jamun using Khoya and you will never think of buying ready mix again!

Ingredients :
Mawa / Khoya | 1 Cup* |
Maida / All purpose Flour | 1/2 Cup |
Baking Soda | a Pinch |
Milk | 1/4 Cup ** |
Sugar | 1.5 Cups |
Water | 2.5 Cups |
Cardamom Powder | 1/4 teaspoon |
Rose Essence | 1/4 teaspoon |
Ghee | For Frying Jamun |
* 1 Cup = 250ml
** I used 1/4 cup of milk, but sometimes we may need more or less till we get a smooth dough

Method:
- First lets prepare the dough. In a mixing bowl, add khoya, maida, baking soda and give a good mix
- To this now, add milk little by little and mix it to make a soft dough. I used 1/4 cup of milk, but sometimes we may need more or less till we get a smooth dough.
- Make small balls out of the dough. Do not make bigger balls as the balls tend to increase the size while frying in oil as well as soaking in sugar syrup
- Before frying the Jamun balls, lets prepare the sugar syrup
- In a sauce pan, add sugar and water and mix well. Bring it to boil and allow the sugar to dissolve completely.
- Then, keep the flame in low and boil the sugar syrup till it becomes sticky. Once the sugar syrup is sticky, switch off the flame
- In another heavy bottomed pan, add ghee. We can also add half ghee and half oil.
- Add 5-6 Jamun balls and deep fry the Jamun in low flame till golden brown. If you keep the flame high, the outside of the Jamun will become brown but the inner portion might not be cooked properly. So always keep the flame low and fry the Jamun
- The the fried Jamuns and let it sit aside for couple of minutes
- Meanwhile, reheat the sugar syrup till it is warm and then drop the Jamuns in the sugar syrup. Stir them gently to coat and let the Gulab Jamun soak in Sugar Syrup for 2 hours
- After 2 hours, the soaked Gulab Jamun would have been doubled their size and also would have become so soft and fluffy
- Serve the yummy and fluffy Gulab Jamun hot or cold and enjoy the dessert!
