Ingredients

  • 1 cup Water 1 cup = 250 ml
  • 3/4 cup Sugar
  • 5 tbsp Rose Water or 3 drops of Rose Essence
  • 4 cups Soda Plain or Club Soda
  • 1/2 cup Ice Cubes

Instructions

  • Add water and sugar to the sauce pan and bring it to boil. Boil the sugar syrup for 3-4 minutes and the sugar would get diluted by that time. Remove the sugar syrup from flame and allow it to fully cool off. I have used rose water as I dont get rose essence in my place. But if you get rose essence I would prefer you to use rose essence. The main difference between rose essence and rose water is rose essence is concentrated and rose water is the diluted version of the rose essence. If you are planning to use rose essence then only 3 drops is sufficient for making this paneer soda. But if you are using rose water then use 5 tablespoon. Then only the essence gets absorbed in the soda and you could taste that flavour.
  • Once the sugar syrup is fully cooled off, add rose water/ rose essence. Pour it in a glass bottle or air tight container and refrigerate it for 1-2 hours.
  • Whenever you are planning to serve, take the syrup out of the refrigerator. Take a serving glass, add ice cubes to it. Add 4 tablespoon of the sugar syrup to the glass of ice cubes. Finally add soda water to the glass
  • Serve the chilled Paneer Soda and enjoy the taste!

I love Paneer Soda! I have only seen it in Karaikudi area, though, not in Chennai or Madurai. However, when we visit India, I have to be careful about not falling sick. Once I had a lot of it during my sister's wedding and fell horribly sick because the neck of the soda bottles was not clean. So glad to get a homemade recipe!

This recipe takes me back to my school days 30+ years ago:-)) The princely sum of 15-25 paise that was our pocket money would go towards one paneer soda shared by 2 of us bought from the strategically located Iyer Kadai in Mylapore… And what better than this chilled drink to beat the sizzling afternoon heat of Madras??? Thanks for sharing the recipe. Will see if the next gen in my family is equally enamoured…

As far as I know one shouldn’t add essence to uncooked, unheated food. It causes an allergic reaction especially in children and leads to asthma like condition. Cook it for atleast 5 minutes.
