Ingredients

  • 2 Cups Curd (Plain Yogurt) 1 Cup - 250ml
  • ½ Onion Finely Chopped
  • ½ Red Capsicum Finely Chopped
  • ½ Green Capsicum Finely Chopped
  • ½ Carrot Grated
  • ½ tsp Pepper Powder
  • ½ tsp Salt Adjust As Needed
  • ¼ tsp Dry Oregano Flakes
  • ¼ tsp Red Chili Flakes
  • 2 tbsp Butter For Spreading
  • 10 Bread Slices

Instructions 

Hung Curd Process

  • Take curd in a clean white cotton cloth or muslin cloth.
  • Bring all edges of the towel together and twist and squeeze gently.
  • Keep a heavy object on top of the cloth. That will squeeze the moisture and we will get thick curd.
  • Next day, open the knot and hung curd will be ready. It will be thick. Take the hung curd in a bowl.

Preparing the Curd Mixture

  • Finely chop the onions and add it to curd.
  • Finely chop the green capsicum and add it to the curd.
  • Finely chop the red capsicum and add it to curd.
  • Wash, peel and grate the carrot and add it to curd.
  • Now, add pepper powder, salt, red chili flakes, oregano flakes to curd . Again using a spoon to mix well. 
  • Now the curd Veg Spread ready!
  • Take 2 slices of bread. In one slice, spread 2 teaspoon of hung curd veg mixture.
  • Take other bread and apply butter on one side and keep the butter applied side on top of the other bread. 

Making Sandwich

  • Heat up the sandwich maker or panini maker, keep the bread slices and cook till the bread becomes light brown and the maker shows ready sign.
  • Take out the crispy Hung Curd Veg Sandwich and cut diagonally and serve with ketchup.
  • Delicious Hung Curd Veg Sandwich ready!

Tried this with Ricotta cheese + few drops of lime juice instead of hung curd. Came out excellent. Very good for school, college lunch. Thanks for posting
