Idichakka Thoran (Raw Jackfruit Stir Fry)
Idichakka Thoran, a popular dry curry from Kerala Cuisine. Tender green jackfruit are cooked and crushed with pestle and mortar and tossed with coconut based spice mixture and finally enhanced with tempering. Its usually served as a side dish with rice.
Idichakka Thoran (Raw Jackfruit Stir Fry), my mom-in-law used to do this often. I learnt this recipe from her. In Kerala, they call this curry as Idichakka Thuvaran. The reason for this name is, in earlier days, people need to cook the raw(tender) jackfruit and they mince the cooked jackfruit in mortar and pestle that’s why the name Idichakka(Chakkaya Idikaradhu). But now, we all are using mixer and grinder instead of mortar and pestle. I have also crushed the cooked jackfruit pieces in mixer only. But mixer crushing makes it more coarse than the hand crushed. If you have a mortar and pestle, then choose them instead of mixer to get more nicer and traditional curry.
Tips for making perfect Idichakka Thoran:
- Use tender and small green Jackfruit for this thoran. We can also use frozen or tinned jackfruit also if you don’t have option of getting fresh raw jackfruit
- Apply coconut oil or cooking oil in your hand before cleaning the jack fruit, so that you can avoid gum of the jack fruit sticking to your hand
- Use coconut oil for tempering to get original flavor of the thoran
- Be generous in coconut to have a rich coconut flavor in the thoran

Ingredients
- 350 gms Tender Raw JackFruit
- 1 Onion
- ¼ tsp Turmeric Powder
- ½ tsp Red Chili Powder
- 1 tsp Salt
For Grinding
- ½ Cup Grated Coconut 1 Cup - 250ml
- 2 Green Chili
- 6-7 Garlic cloves
- 1 inch Ginger
- 1 tsp Cumin Seeds
For Tempering
- 2 tsp Coconut Oil
- 1 tsp Mustard seeds
- 2 Red Chili
- Few Curry leaves
Instructions
- Remove the outer skin of the Jackfruit and cut the fleshy parts into chunks. Wash them well. Take the chopped jackfruit pieces in a sauce pan along with salt, red chilli powder and turmeric powder and add water and cook it in stove top. We can also pressure cook them and allow it for 2 whistles. Sometimes pressure cooker method, makes them so mushy and hence I prefer to cook it in stove top. The jackfruit pieces need to be just cooked and not over cooked.
- While the jackfruit is getting cooked, we can take the grinding ingredients to the mixer and grind it to a nice powder without adding any water
- Once the jackfruit pieces are just cooked, drain the water using a strainer and allow them to cool off. Take little of the cooked jackfruit pieces in a mixer
- Just give a pulse or two to just mince them. Do not grind it too much. Repeat the same for remaining cooked pieces. Do it batch by batch otherwise, we could end up with mushy jackfruit. Heat oil in a pan, add mustard seeds. When the mustard seeds starts to sputter, add broken red chillies and curry leaves and saute them for a second.
- Then add finely chopped onions along with pinch of salt and turmeric and saute them till they turn transparent. Then add the crushed jackfruit and mix well.
- Add the ground coconut powder and adjust the salt and mix them well. Keep in low flame and stir fry them for a minute and then remove from flame
- The yummy Idichakka Thoran (Raw Jackfruit Stir Fry) is now ready to serve!
