Kothavarangai Paruppu Usili | Cluster Beans Paruppu Usili Recipe
Paruppu Usili is one of the traditional poriyal variety we make. Usili is the cooked and crumbled dal added to vegetables like beans, cluster beans, plantain flower or any even spinach. This is the Cluster Beans Paruppu Usili recipe which is a very tempting and tasty accompaniment for any South Indian Main Course.
Paruppu Usili Recipe is yet another traditional recipe in Tamil Brahmin Kitchen. Any Festivals or auspicious occasions like Marriages, Paruppu Usili is one of the main item in the menu. Conventionally, we use Beans, cluster beans, vazhaipoo, spinach etc. I have also done usili with Radish greens, Asparagus, broccoli. Paruppu Usili is one of the tastiest accompaniment for any South Indian Main courses.
There are 2 ways to make Usili:
- Dals are soaked overnight or atleast for 2 hours and ground to paste with red chili and the paste is then crumbled with little oil and added to the steam cooked cluster beans. I have given here this way of making Usili
- Soaked dal is ground to fine paste and make small dumplings out of the paste. Steam cook the dumplings and then crumble it with your hand. We can then mix that crumbled dal mixture to the cooked vegetable.

Ingredients
- 300 gms Cluster Beans
- 1 tsp Salt
- ¼ tsp Turmeric Powder
For Grinding
- ¾ Cup Toor Dal 1 Cup - 250ml
- ¼ Cup Split Bengal Gram (Channa Dal / Kadalaparuppu)
- 5 Red Chili
- ¼ tsp Salt
- a Pinch Asafoetida (Asafetida / Hing)
For Tempering
- 2 tsp Oil
- 1 tsp Mustard Seeds
- 1 tsp Split Urad Dal
- Few Curry leaves
Instructions
Soaking Dal
- Soak the Dal’s in water over night or in hot boiling water for at least 2 hours.
Grinding Dal
- Rinse the Dal’s and strain the water and grind it in mixer once along with red chilli, hing and salt without adding water
Making Usili
- Heat the oil in the pan, and add the ground paste and keep the flame in low
- Allow the ground paste to cook in oil and it will crumble down into smaller pieces.
Tempering Process
- In a separate pan, heat some oil and add mustard seeds when the oil is hot.
- When the mustard seeds starts to sputter, add the urdhal and fry till it turns into golden brown color.
- To this add chopped Kothavarangai(Clustered Beans) along with turmeric powder, salt and sprinkle some water to cook the Kothavarangai(Clustered Beans). We can also cook the cluster beans in pressure cooker and then add the cooked cluster beans directly after seasoning. This will simplify our process further.
Finishing Kothavarangai Usili
- When the Kothavarangai(Clustered Beans) is cooked completely, add the crumbled Dal mixture and mix it well.
Serving Time
- The mouth-watering Kothavarangai(Clustered Beans) paruppu usuli is ready to serve!

Method:
