Masala Lemon Rice

Lemon Rice is one of the conventional rice variety in Southern India.  Instead of making the conventional Lemon rice,  we can add freshly ground masla which completely elevates the taste and gives a new twist to the Lemon rice.  We just need to fry some whole masala and make a powder and add it to lemon rice. Rest of the other procedures are similar to the conventional lemon rice. Adding masala gives a whole new aroma and flavor to the lemon rice. This can be served with any stri-fry vegetables, preferably brinjal / ladysfinger / Potato stir-fry.

Masala Lemon Rice is made by adding freshly ground masala powder in the lemon rice. This gives nice twist to the conventional lemon rice. This can be served with any stir-fry vegetables or Pappad

Ingredients

  • 1½ cups Cooked Rice
  • 1 teaspoon Salt Adjust to your taste
  • 1 no Lemon medium size
  • 1 teaspoon Sesame oil

For making Masala

  • 1 inch Cinnamon (Pattai)
  • 3 nos Cloves (Krambu / Lavang)
  • 2 nos Cardamom
  • ½ teaspoon Poppy Seeds optional
  • 1 nos Red Chili
  • ¼ teaspoon Fenugreek seeds
  • 1 teaspoon Oil

For Tempering

  • 3 tablespoon Sesame oil
  • 1 teaspoon Mustard Seeds
  • 1 teaspoon Cumin Seeds
  • 2 teaspoon Split Urad Dal
  • 2 teaspoon Split Bengal Gram (Channa Dal / Kadalaparuppu)
  • 1 tablespoon Roasted Peanuts
  • 2 nos Green Chilli slit
  • 1 sprig Curry Leaves
  • 1 teaspoon Ginger finely chopped
  • ½ teaspoon Turmeric Powder

Instructions 

  • Spread the cooked hot rice in a wide vessel or a broad plate. Add a teaspoon of sesame oil and gently mix and keep this rice aside
  • In a pan, heat a teaspoon of oil. Throw in all grinding ingredients and fry it and then cool the fried ingredients.
  • Grind the fried ingredients to powder. Keep this masala aside
  • In a pan, heat sesame oil. Add mustard seeds and cumin seeds and allow it to sputter. Add split urad dal, channa dal, peanuts and fry till golden brown.
  • Throw in green chili, ginger and curry leaves and fry it.
  • Add the seasoning and ground masala powder to the spread rice.
  • Also add salt, and lemon juice and mix the rice gently. Do not break the rice by mixing roughly.
  • Take the mixed Masala Rice in a serving Bowl. Serve the delicious Masala Lemon Rice with any Stir-fry veggie along with papad and enjoy the delicious rice!

Detailed Instructions with step by step pictures
