Green Peas Kachori(Matar Kachori)-Crisp savoury bursting with fresh flavour of seasonal peas..  It has perfect crisp, flaky texture with very flavorful green peas stuffing inside. A quick and easy to make crispy snack which is perfect to be served as an evening snack with hot tea / coffee.  Instead of making the whole outer cover in maida, we can add wheat flour and maida in equal proportions to make this snack little healthy. Also green peas filling gives a very good flavor and taste. Try this easy to make Matar Kachori (Green Peas Kachori) and I hope you will love it 🙂

Ingredients

For Outer Cover

  • ½ Cup Maida (All Purpose Flour) 1 Cup - 250ml
  • ½ Cup Wheat Flour
  • 2 tbsp Ghee (Clarified butter)
  • ½ tsp Salt Adjust as needed

For Filling

  • 1 Cup Green Peas
  • 2 Green Chili
  • 1 inch Ginger
  • ½ tsp Red Chili Powder
  • ½ tsp Coriander Powder
  • ½ tsp Cumin Powder
  • ¼ tsp Chaat Masala
  • ¼ tsp Amchoor Powder (Dry Mango Powder)

For Tempering

  • 1 tbsp Oil
  • ½ tsp Fennel Seeds
  • ½ tsp Cumin Seeds

Instructions 

Prepare Outer Cover

  • In a mixing bowl, add maida, wheat flour, salt and ghee and mix them up well.
  • Add water little by little and knead it to a smooth dough.
  • Cover and let the dough sits till we prepare the filling.

Prepare Filling

  • Boil the green peas till they are soft. I used frozen green peas so I boiled them up for 6 minutes in microwave.
  • Take the boiled green peas in a mixer jar. Add green chili and ginger and grind it to a coarse paste. Just pulse it to make it a coarse paste.
  • Heat oil in a pan. Add cumin and fennel seeds and allow it to sputter.
  • Then add green peas paste and and saute them for 2 minutes. 
  • Add red chili powder, coriander powder, cumin powder, chaat masala and amachor powder and salt and mix well.
  • Keep in flame for 2 minutes and then switch off the flame. The green peas filling Ready!

Shaping Kachori

  • Take the dough, knead well. Make small balls out of the dough. 
  • Knead each ball to a thin and small circle and then keep a tablespoon of peas filling in the middle.
  • Bring all the edges together and close it to keep the filling inside. Repeat the step to prepare other kachoris.

Deep Frying

  • Heat oil in pan. When the oil is hot, gently drop 3-4 kachori and fry them in hot oil till they are crispy and golden brown in both the sides. Place the kachoris in paper towel to drain excess oil.

Serving Time

  • Hot and crispy Green Peas Kachori now ready to serve!
