Mixed Millets Adai Recipe | Sirudhanya Paruppu Adai
Adai is a popular dish in Southern Part of India especially in Tamilnadu. Adai is made of rice and mixed dals and it is usually served with Aviyal. I love having adai with jaggery. We can make adai with mixed millets to have a healthier dish. We can choose any different millets for this adai. In this recipe, I have chosen Kambu, Raagi and Thinai along with rice to make healthier adai. Lets see how to make this healthy and yummy Mixed Millets adai (Sirudhanya Paruppu Adai).

Ingredients:
Kambu | 1/2 Cups* |
Raagi | 1/2 Cup |
Thinai | 1/2 Cup |
Raw Rice | 1/2 Cup |
Thurdal | 1/4 Cup |
Channa dal | 1/4 Cup |
Sprouted moong | 1/4 Cup |
Green Chilli | 1 |
Red Chilli | 3 |
Curry Leaves | few |
Salt | To Taste |
Method:
- Soak the millets, rice and dals separately except sprouted moong in water for 3 hours. Add chillies, curry leaves and salt to the mixer
- After 3 hours, drain the water from millets, rice and dals and add it to the mixer. To the mixer then add the sprouted moong
- Grind everything to a coarse batter. Coarse batter would give a nice texture and yummy taste to the adai. Heat a tawa, pour 1 ladle of adai batter and spread it to make a thin dosa. Make a small hole in the middle and pour gingelly oil and cook the adai in medium flame.
- Flip the adai and cook the adai on the other side till the adai is crispy.
- Serve the healthy and yummy adai with jaggery / aviyal or sambar.

Hi…thank you for the healthy dish..going to try for sure..do we need to ferment the batter. .or can use immediately after grinding. .
For any variety of adai, generally we dont need to ferment. But if you like little sourness, you can add 1 ladle of sour curd to the adai batter
