Mixed Vegetable Sagu Recipe | Saagu Recipe

Mixed vegetable Sagu is  one of the popular accompaniment for Set dosa, poori and many more dishes. Saagu is rich creamy gravy with a wonderful blend of spices. A healthy and delicious accompaniment for a wonderful morning. Set dosa with Saagu is a popular breakfast combo in almost all restaurants in Karnataka. A rich and healthy side dish for a morning breakfast. I love relishing this yummy Saagu with roti and also with set dosa.
Sagu is much similar like Vegetable Kurma but its mild in masala with the richness of coconut and poppy seeds. There are many variations we can bring in this recipe. Here are few Variations
  1. Choice of Vegetables: I have used the regular veggies like carrot, beans, peas and potato. But we can also add veggies like Chow Chow (Chayote squash), bottle gourd, cauliflower
  2. Spices to Grind: We can add roasted gram along with other grinding ingredients. We can also add mint and coriander leaves while grinding. Poppy seeds helps to get richer and thicker gravy. We can also use cashews in place of poppy seeds
  3. Instant Pot Cooking: We can make this mixed vegetable Sagu in an Instant Pot. First prepare the grinding masala and set aside. Then we need to switch on the instant pot in sauté mode and sauté the vegetables. Finally close the IP with lid and switch on the pressure cook mode. Cook for 5 mins in sealed position and do a quick pressure release and serve the delicious vegetable Sagu

Ingredients

Grinding Ingredients

  • 1 tbsp Coriander seeds
  • 1 tsp Fennel Seeds
  • 2 Red Chili
  • ½ tsp Peppercorns
  • ½ tsp Cumin Seeds
  • 1 inch Cinnamon Stick
  • 4 Cloves
  • 3 Cardamom
  • 1 tsp Poppy Seeds
  • 2 tbsp Grated Coconut
  • ½ tsp Grated Ginger
  • 2 Garlic cloves

For Gravy

  • 1 Big Size Onion
  • 1 Green Chili
  • 2 Cups Mixed Vegetables carrot, peas,beans,capsicum,potato etc
  • ½ tsp Turmeric Powder
  • 1 tsp Salt Adjust As Needed
  • 1 tbsp Oil
  • 2 tbsp Butter
  • 1 tbsp Coriander Leaves

Instructions 

Preparing Grinding Ingredients

  • Heat a pan and add all the grinding ingredients except coconut. Dry roast them till all the whole garam masala is nicely roasted.

Grinding Process

  • Take the roasted ingredients in the mixer jar. Again place the pan on the flame and dry roast the coconut. Take the roasted coconut to the mixer jar
  • Throw in ginger and garlic to the mixer jar. Grind them all to a smooth paste by adding little water. Keep the ground paste aside

Sauté Process

  • Heat a heavy bottomed pan, add oil. When the oil is hot, add onions and chopped green chilli. Sauté the onions till they are translucent
  • When the onions are sautéed well, add butter. Then, add the mixed veggies to the pan. Stir-fry in high flame for couple of minutes
  • Now, add turmeric powder, salt, ground spice paste along with 1.5 cups of water and give a good mix. Switch off the flame

Pressure Cooking Process

  • Take the prepared gravy in a vessel and pressure cook for 3-4 whistles.
  • After pressure is released, take out the cooked Saagu and garnish with fresh coriander leaves

Serving Time!

  • Serve the delicious and healthy Mixed vegetable Saagu with Roti, Set dosa or poori and enjoy the dish!

Notes

  1. We can make little thicker in consistency when serving with Roti and lighter consistency when served with Idli/Dosa
  2. Poppy Seeds are optional we can replace with cashew. Both Cashew and poppy seeds makes the gravy richer and thicker
  3. We can add few mint leaves and coriander leaves to make more flavorful gravy

Method with Step by Step Pictures:

    2. Add garlic and ginger and grind them all to a smooth paste by adding little water. Keep the ground paste aside
    3. Heat a heavy bottomed pan, addoil, when the oil is hot, add onions and chopped green chilli and saute the onions till they are translucent
    4. When the onions are sauted well, add butter and then add the mixed veggies and stir-fry in hight flame for couple of minutes
    5. Then add turmeric powder and salt and mix well. Add the ground paste and also add1.5 cups of water and mix everything well. Switch off the flame and take this gravy to the vessel and pressure cook it allowing for 3-4 whistles.
    6. After pressure is released, take out the cooked Saagu and garnish with fresh coriander leaves
    7. Serve the delicious and healthy Mixed vegetable Saagu with Roti, Set dosa or poori and enjoy the dish!
