Rava Ladoo is a traditional sweet bite made using Semolina (Rava / Sooji), Sugar and Ghee. It's one of the easy to make sweet which is soft and melts in the mouth. It can be made with or without coconut. It's a beginners recipe and one of the least complex sweet for Diwali.

Rava Laddu is one of the easiest sweet that can be prepared for many occasion. This is a beginers recipe made using simple ingredients. Sooji (Rava) and Sugar are the key ingredients to make this laddu.  Ghee is being used for binding the laddu.
Rava Laddu can be prepared in few different ways. I have noticed some people using Sugar syrup to make this laddu. Some add milk as a binding material. I have followed a very simple process where the sugar is added along with rava and the laddu balls are being formed with the help of ghee.

How to make best tasting Rava Laddu ?

  1. Roasting the Rava (Sooji) : Roast the rava in a medium – low flame. Keep stirring it once the rava is hot. If not the rava will stick into the bottom of the pan and result in getting brown/ burnt.  As soon as you smell a nice aroma   and see light steam from the rava we can switch off the fame.
  2. Texture of the Rava : I would recommend to make coarse rava to get crunchy laddu. While grinding in the mixture make sure that you grind it till you get a coarse mixture (not a smooth powder)
  3. Do it in batches : I would recommend to prepare laddu in batches. Take a portion of the rava/sugar mixture, add ghee and make the balls.  You may want to keep the ghee in warm mode so that ghee will get mixed with the mixture easily and gives you mighty laddus.  Adjust the Rava and Ghee portions to get the round shaped laddu
  4. Make some variations : You can optionally add dry coconut and dry fruits to get different flavor.

Ingredients

  • 1 cup Semolina (Sooji / Rava) 1 cup = 250 ml
  • 1 cup Sugar adjust to your taste
  • ¼ cup Ghee
  • ¼ tsp Cardamom Powder
  • 3 tbsp Cashews

Instructions 

Prepare the Rava & Sugar Mixture

  • Heat a pan and dry roast the rawa in a pan till it becomes light brown color and turns aromatic.
  • Take the rava and sugar in a mixer and grind the rava along with sugar in a mixer to a coarse powder.

Fry the Cashews

  • In a pan, heat a tablespoon of ghee. Add the cashews and fry until it turns golden brown color and keep it aside.
  • Heat the remaining ghee in a low flame and add cardamom powder

Start Making the Ladoo

  • We are going to make the Ladoo in small batches. Take a portion of ground Rava / Sooji mixture in a separate pan and add 1 ladle of ghee around the ground mixture
  • Add few cashews. Using a spoon mix the mixture well. Make sure that the ghee-rawa/sugar mixture is in a right consistency that lets you make small lemon sized balls. Adjust the quantity of Rava / Ghee if required.
  • Now take small quantity of Rava mixture in hand and press it hard to make it like a small ball. 
  • Repeat the above steps for the remaining ground Rawa/Sooji mixture.
  • The delicious Rawa Laddu is ready for serving. Store it in an air tight container.

Hi,
I too hail from brahmin community (amma's place – sulamangalam). We too prepare ladoos the same way – the very easiest way also. I have been browsing few other sites which indicates 1 thread sugar syrup consistency for preparing these rawa ladoos. They also add milk to form balls.
I bet our's is the easiest and can preserve for a longer time.
