Sojji Appam (Sweet Poori) is one of the forgotten recipe. It is one the old and traditional sweet made with maida as outer cover and Rava Kesari as filling. This deep fried crispy sweet poori is a absolute treat for our taste buds. Sooji Kesari itself is a delicious sweet and we are going to use Kesari as a filling. This seems to be complicated but believe me, the taste of this Sojji appam is so delicious that our heart wants more 🙂 . For events like Sumangali Prarthanai and festivals like Navratri, it was tradition to make this Sojji Appam. Try this forgotten recipe for this Navratri or casually for a evening snack and let me know your comments!
Tips for making Sojji Appam:
- We can use wheat flour and Maida in equal quantities if you are health conscious. I make this recipe once or twice a year so I use maida.
- We can use jaggery instead of sugar. For 1 cup of rava, use 1.5 cups of jaggery.
- Sugar quantity is usually 1:2. For 1 cup of Rava(Sooji) we use 2 cups of sugar. If you are not sweet toothed, then you can reduce the sugar to 1:1.
- We generally add food color for Kesari, but for this Sojji appam we don't use.
- While frying make sure the oil is hot, that will help the appam to puff. Puffiness goes on over a period of time but it tastes and stays good for 2 days at room temperature. Microwave the stuffed poori for a few seconds and enjoy the hot.
- Adding coconut is optional we can skip.
- Make sure the sooji is cooked completely before adding sugar or jaggery.

Ingredients
- 1 Cup Maida (All Purpose Flour) 1 Cup - 250m
- 1 pinch Baking Soda
- 3 tablespoon Ghee
- 1 tablespoon Cashews
- 1 Cup Semolina (Sooji / Rava)
- 1 tablespoon Grated Coconut
- 2 Cups Water
- 2 Cups Sugar
- 3 Cups Oil For Deep Frying
- 1 Pinch Cardamom Powder
Instructions
Prepare Outer Cover Dough
- In a mixing bowl, add Maida, baking soda and give a good mix. Add water little by little and knead it to a dough.1 Cup Maida (All Purpose Flour), 1 pinch Baking Soda
- Add ghee and knead it to a soft dough.3 tablespoon Ghee
Prepare Filling
- Heat 1 teaspoon of ghee in a pan. Add cashews and fry in ghee till it is light golden color.3 tablespoon Ghee, 1 tablespoon Cashews
- Now, add sooji to the pan. Fry the sooji till you get a good aroma.1 Cup Semolina (Sooji / Rava)
- Next add grated coconut and give a good mix.1 tablespoon Grated Coconut
- To the pan, add 2 cups of hot water and give a good mix. Keep stirring to avoid cups and cook the sooji till its soft.2 Cups Water
- Now, add sugar and cardamom to the cooked sooji. Give a mix. Sugar dilutes the cooked sooji.2 Cups Sugar, 1 Pinch Cardamom Powder
- Keep stirring till the sugar gets incorporated and the sooji gets thicker. Add 1 tablespoon of ghee and give a final mix.
- Allow the kesari to cool down and then make small lemon size balls out of the kesari and keep it on a plate.
- Now take the maida dough, make small lemon size balls out of the dough and keep it on plate.
- Take one dough ball, spread it like a small poori. Now place a filling and gently close and seal the filling.
- Now again using ghee greased hand, spread it gently to a small poori. Repeat the same and make rest of the poori.
- Heat oil in a pan. When then oil is hot, drop 2-3 poori in hot oil. Keep the flame in medium, allow the poori to fry till light brown.3 Cups Oil
- Flip the poori and cook till the poori becomes golden brown. Remove the poori from oil and place it on paper towel to drain excess oil.
- Repeat the same and fry all the sojji appam.
- Delicious Sojji Appam is now ready to serve!
