Aval payasam (Poha Kheer) is one of the easy payasam variety that we can make. Poha(Flattened rice) is healthy and also quick and easy to cook. This Special Aval Payasam has a mild pink color along with richness from nuts, milk and condensed milk. The red poha really adds a nice appealing color to the payasam. If you are looking for a healthy weight loss diet, you could consider including poha. It is a good source of carbohydrates, is packed with iron, is rich in fibre, and is a good source of antioxidants and essential vitamins. Relish this Special Aval payasam hot or refrigerate and serve it cold!

Is Red Poha more healthier?

Red poha is made from red rice. First the red rice is parboiled, pounded to remove the husk which makes the rice flat. Then the flattened rice flakes are dried, packaged.red rice is not highly processed and retains its bran layer, which makes it healthier than regular white rice. Red rice is rich in fibre, vitamins, minerals, and antioxidants. The red poha recipes taste no different than the typical poha. So we can use more of red poha in place of the regular white poha as a healthy choice!

Tips for making Special Aval Payasam:

  1. Red Poha – Try to use red poha (sivappu aval) which gives a nice light pink color to the payasam. If you don’t have red poha use regular white poha. But make sure that the thick variety of the poha is used.
  2. Whole Milk – Always try to use whole milk for making payasam (kheer).
  3. Almond Paste – Adding almond paste is optional but this adds richness to the kheer.
  4. Condensed Milk (Milk Maid) -As we are adding sugar, we are adding only 1/4 cup of condensed milk. If you like, you can skip sugar and add only condensed milk.
  5. Use broad/bigger Vessel for cooking the milk to avoid overflow of the milk/spill over.

Ingredients

  • ¾ cup Aval / Poha / Flattened Rice Red Poha preferably
  • 1½ Liter Milk whole milk preferably
  • ½ cup Sugar
  • ¼ cup Sweetened Condensed Milk (Milk Maid)
  • 2 tsp Ghee (Clarified butter)
  • 15 nos Almonds
  • 3 tbsp Cashews
  • ¼ tsp Cardamom Powder

Instructions 

Soak the Almonds

  • Soak the Almonds in hot water for 15 minutes (alternatively you can also soak the almonds overnight in the normal water)
    15 nos Almonds

Preparing Almond Paste

  • After 15 mins, remove the skin of each almond.
  • Take almonds to the mixer jar and add 2 tbsp of milk. Grind it to smooth paste.

Powder the Aval / Poha / Flattened rice Poha

  • Heat the heavy bottomed pan. Add 1 tsp of Ghee. Add red poha and fry in low flame for 2 minutes in a medium flame.
    2 tsp Ghee (Clarified butter), ¾ cup Aval / Poha / Flattened Rice
  • Take the roasted poha in a mixer jar and give a pulse or two. Grind it to coarse powder.

Cooking Kheer

  • Pour 1.5 litres milk in a heavy bottomed pan. Bring the milk to boil.
    1½ Liter Milk
  • When the milk starts to boil, add powdered poha and stir well so there are no lumps. Let the poha powder cook in milk for 2 mins.
  • Then add almond paste along with sugar and give a good mix.
    ½ cup Sugar
  • Now, add the cardamom powder, condensed milk. Stir well. Keep in low flame for 5 mins and then switch off the flame.
    ¼ cup Sweetened Condensed Milk, ¼ tsp Cardamom Powder

Garnishing

  • Heat ghee in a pan. Add cashews and fry till the cashews become light golden brown.
    2 tsp Ghee (Clarified butter), 3 tbsp Cashews
  • Add this roasted cashews to the Aval Payasam.

Serving

  • The delicious Special Aval Payasam is now ready to serve!!!
