Sweet Potato Curry is a tasty accompaniment made using cooked sweet potato and freshly ground spice powder. We can make it simply by adding red chili and other masalas, but with freshly ground spice powder the curry becomes more flavorful and tasty.

- 1 Heavy Bottomed Pan

Ingredients
- ½ kg Sweet Potato
- ½ tsp Turmeric Powder
- 1½ tsp Salt
For Spice Powder
- 1 tbsp Split Bengal Gram (Channa Dal / Kadalaparuppu)
- 1 tbsp Coriander Seeds
- 2 nos Red Chili adjust to your spice needs
- 1 tbsp Oil
For Tempering
- 1 tsp Oil
- 1 tsp Mustard seeds
- 1 tsp Split Urad Dal
Instructions
- Heat oil in a pan, add grinding ingredients and saute them in oil till the dals turn golden brown color.
- Remove these fried ingredients and add it to the mixer and grind them to nice and smooth powder.
- Our spice powder is now ready.
- Wash and peel the sweet potatoes and chop them into small cubes. Take the chopped sweet potatoes in a sauce pan and add water to soak the potato.Add turmeric powder, salt and keep it in flame. Allow the sweet potatoes are cooked and becomes tender and soft
- Drain excess water from cooked sweet potatoes using a strainer.
- Heat oil in a pan and add mustard seeds. When the mustard seeds starts to sputter, add split urid dal and fry till the dals turn golden color.
- Add the cooked sweet potatoes to the pan and mix well. Then add the ground spice powder and give it a good mix.
- Stir-fry the potatoes in medium flame for a couple of minutes and then switch off the flame.
- Sweet Potato Spice Curry is now ready to serve!!! Serve with any rice or roti and enjoy the dish!!!
