Sweet Diamond Cuts are a crunchy and slightly sweet made using Maida (All purpose Flour) and Sugar. This is one of the easiest sweet that can be prepared for Diwali or for an event. This can be made as a savory version as well as sweet version.
Sweet Diamond Cuts (or) Maida Biscuit is an easy to make sweet made using Maida, Sugar and Ghee, which are readily available in any households. This is a sweeter version of thukkada (Spicy Diamond Cuts) and this is for the sweet lovers. This Sweet Diamond Cuts or Diamond Biscuits is a very simple to do dish and it doesn’t require any expertise level to prepare. Any beginners can also try this simple dish and it may never go wrong.
This is also one of the traditional and famous sweet prepared especially for Diwali. It is a tradition for us to make sweets and snacks for Diwali not only for our family, but we also love to share with our friends and relatives. Some of the sweet dishes like seven cup cakes, coconut burfi, Instant Doodh beda etc., are easy to make with less effort and also we would get more quantities to distribute. Sweet Thukada (Sweet Diamond Cuts or Diamond Biscuits) is one such dish which is simple to make, yummy and also we would get more quantity for distribution.

- Chapati Pan and Rolling Pin

Ingredients
- 2 cups Maida (All Purpose Flour) 1 cup = 250 ml
- 2 tbsp Ghee (Clarified butter)
- ¼ tsp Baking Soda
- 1 pinch Salt
- ½ cup Sugar
- ½ tsp Cardamom Powder
- Cooking Oil for deep frying
Instructions
Prepare Sugar syrup
- Take a mixing bowl, add ghee, sugar, salt, cardamom powder and cooking soda and stir well till you it turns foamy and the sugar gets dissolved in ghee mixture
Making of the Dough
- Add the Maida flour/All purpose flour to the sugar mxiture and mix well.
- Once you mix the maida and ghe mixture, you could see it as a crumble mixture. Add water little by little and and make this into a soft dough like chapati dough
- Cover it with a damp cloth or clinging film and keep it aside for 30 minutes. After half an hour, make 4 equal balls out of the dough and keep it aside
Making of the Diamond biscuit
- Take the chapati pan and rolling pin and keep 1 ball of the Maida flour/All purpose flour mixture and roll it like a chapati by dusting it with all purpose flour. Using a knife cut the Maida flour/All purpose flour dough into small diamond pieces
- Place the diamond shaped pieces in a paper and allow it to dry. Repeat the above steps for the remaining balls and allow all the diamond shaped pieces to dry completely.
Deep Frying the biscuit
- In a pan, heat the oil and when the oil is hot, add handful of dried diamond shaped thukkadas and sprinkle it so that they are not stick to each other. fry it until it becomes crisp. Take the crisp thukkadas and keep it in a bowl with a paper tissue to dry the excess oil.
- The tasty and crispy Sweet Diamond Cuts(Thukkadas) or Sweet Diamond Biscuits are ready to serve!

Notes
- Store it in Air tight container and use it for longer shelf life
- Instead of adding sugar directly in the dough, you can cook the biscuits first and later you can soak it in sugar syrup
- Cut the diamond based on the size that you prefer.
- Instead of Maida, you can replace it with Wheat flour too.
- Fry the biscuits on Medium flame

For the sweet thuja can we use wheat flour and maida in the proportion 1:1.
Yes Vijaya, we can very well use. Also we can use only wheat flour and skip maida also but the taste would be little less than maida one.

When i tried frying them , the dough got melted in the oil. The resudue was floating in the oil. What could the possible error ? Any suggestions?
sometimes if there is moisture in the cut diamonds then the dough will melt. Thats the reason we are drying it out in a paper towel before frying
