Tomato Rice using Thokku (Tomato Onion Masala)

Tomato Rice can be made using different methods and different variations. In this method, we are making the Tomato Rice using Tomato Masala. This tomato masala (thokku) can be stored in refrigirator and can be used to make tomato rice whenever required

Tomato Rice using Thokku (Tomato Onion Masala), is another way of making Tomato Rice. Here, first we are going to make a thokku (thick gravy) with onion and tomato along with other Indian Masalas. There won’t be any chunks of tomato-onion as we are grinding it to a smooth paste. If we like only smooth version of tomato rice without any chunks, this version of tomato rice would be perfect. Also, nowadays many working women, makes food preparations for the next whole week during weekend itself. We can make this onion tomato thokku  and refrigerate during weekends and during weekdays, we can mix the thokku with fresh cooked rice along with little sesame oil and our lunch will be ready in minutes.

Even many kids doesn’t like the slippery tomato chunks and this would a perfect lunch box food for them. They would love the masala flavoured smooth tomato rice. We can make some Stir-fry vegetables as an accompaniment. Potato fry, Tara Root fry, Ladysfinger fry would be some great accompaniments for this yummy rice variety. Also a simple onion raitha would be even more perfect for this yummy Tomato Rice using Thokku (Tomato Onion Masala)

Ingredients

For Grinding

  • 2 nos Onion roughly Chopped
  • 2 nos Tomato roughly Chopped
  • 1 inch Ginger
  • 1 clove Garlic
  • 1 nos Red Chili

For Tempering

  • 2 tbsp Sesame oil (or any cooking oil)
  • 1 tsp Mustard Seeds
  • 1 tsp Cumin Seeds
  • 1 nos Bay Leaf
  • 2 inch Cinnamon (Pattai)
  • 2 nos Cloves (Krambu / Lavang)
  • 2 nos Cardamom
  • 1 nos Green Chilli slit
  • few Curry Leaves

Other Ingredients

  • ¼ tsp Turmeric Powder
  • 1 tsp Salt asjust as per your taste
  • few Spring Onion Leaves For Garnishing (optional)

Instructions 

Grinding Process

  • In a mixer jar, add chopped onion, tomatoes, ginger, garlic, red chilli and grind everything to a smooth paste and keep it aside

Tempering Step

  • Heat oil in a pan. Add mustard seeds and allow it to sputter, add cumin seeds. Then, add whole garam masalas (bayleaf, cinnamon, cloves and cardamom) and saute in oil. Then add green chili and curry leaves and saute for few seconds

Cooking Raw Onion-Tomato Mixture

  • To the pan, now pour the smoothly ground Onion-Tomato-Chilli Paste. Add turmeric powder and salt and stir well. Cover the pan with lid and cook the onion-tomato masala in low flame till the oil oozes out and the mixture becomes thick in consistency. Stir in-between to avoid the masala getting burnt or sticking to the bottom of the pan.

Mixing Process

  • Take 2 cups of cooked rice and spread it on a plate and let it cool down completely. If we use the hot rice directly, the rice will be mushy when we mix with thokku. So once the rice is cooled, add thokku. Add a teaspoon of sesame oil and mix everything gently. Finally garnish with coriander leaves or spring onion leaves.

Serving Time!

  • Serve the delicious Tomato Rice using thokku with any Stir-fry veggies or plain raitha!

Method to make Tomato Rice using Thokku (Tomato Onion Masala)

GRINDING PROCESS

In a mixer jar, add chopped onion, tomatoes, ginger, garlic, red chilli and grind everything to a smooth paste and keep it aside

TEMPERING STEP
