South Indian Style Vegetable Rice Recipe

Vegetable rice a simple and easy to make rice variety. This rice has a balance of nutrients along with rice and vegetables making it more delicious and healthy. Unlike our conventional veg fried rice or veg pulao, this vegetable rice is unique because of the freshly ground spice mix added to this rice. The spice powder adds a distinct flavor to this rice.

South Indian Style Vegetable Rice is a very healthy and easy to make rice variety without much masala ingredients. Very unique in taste and quick to make for Kids lunch box. Unlike our conventional veg fried rice or veg pulao, this vegetable rice is unique because of the freshly ground spice mix added to this rice. The spice powder adds a distinct flavor to this rice. Onion and mixed vegetables are sautéed and tossed with freshly ground spice powder and cooked rice to get this delicious Vegetable Rice. We can make this vegetable rice with freshly cooked rice or with left over rice. This vegetable rice has perfect balance of nutrients making it a perfect healthy rice.

Tips for making Vegetable Rice:

  • We use cooked rice for this rice. We can use freshly cooked rice. Just spread the cooked rice in a broad plate so the rice is fluffy without sticking to each other.
  • Adding salt while the veggies are getting cooked, helps to bring out the moisture making the vegetables to cook faster without any water.
  • Adding peanuts to the grinding ingredients is optional. If you are allergic to nuts, exclude peanuts.
  • Coarsely grind the spice powder. It adds more flavor than grinding it to smooth powder.
  • Do not over cook the vegetables. A little crunchiness to be retained.
  • While mixing rice with vegetables and spice powder, gently mix so that the rice doesn’t get mushy.

Ingredients

  • 2 Cups Cooked Rice 1 Cup - 250ml
  • ¼ Cup Carrot Chopped
  • ¼ Cup Green Capsicum Chopped
  • ¼ Cup Beans Chopped
  • ¼ Cup Potato Chopped
  • ¼ Cup Cauliflower Florets Chopped
  • ¼ Cup Green Peas
  • 1 Onion Chopped
  • 2 tsp Salt Adjust as needed

For Grinding

  • 1 tsp Oil
  • 2 tsp Split Bengal Gram (Channa Dal / Kadalaparuppu)
  • 2 tsp Urad Dal
  • 2 tsp Coriander seeds
  • 3 Red Chili
  • 1 tbsp Peanuts
  • 1 tsp Peppercorns

For Tempering

  • 3 tbsp Oil
  • 1 tsp Mustard seeds
  • Few Curry

Instructions

  • Heat 3 tbsp of oil in a pan. Add mustard seeds and allow it to sputter. Then add curry leaves and give a mix.
  • Next, add the chopped onions and sauté the onions till its translucent.
  • When the onions are sautéed well, then add the chopped vegetables to the pan.
  • Stir-fry the veggies for a minute. Then add salt and give a good mix.
  • Now close the pan with a lid and allow the veggies to get cooked.

Preparing Spice Powder

  • While the veggies are getting cooked, heat a tsp of oil in a pan. Add chana dal, urad dal, coriander seeds, red chili, pepper and peanuts.
  • Fry all the ingredients in medium flame till the dal turns light golden brown.
  • Allow the fried ingredients to cool off completely. Grind it to coarse powder.

Finishing Vegetable rice

  • When the vegetables are cooked completely, add the ground spice mix to the pan.
  • Also add the cooked rice and adjust the salt.
  • Mix the rice gently with the vegetables and spice powder.
  • Finally garnish with coriander leaves.

Serving

  • Relish this delicious Vegetable Rice with papad or any Potato kara curry!
