Paruppu Usili is one of the traditional poriyal variety we make. Usili is the cooked and crumbled dal added to vegetables like beans, cluster beans, plantain flower or any even spinach. This is the Cluster Beans Paruppu Usili recipe which is a very tempting and tasty accompaniment for any South Indian Main Course.

- 300 gms Cluster Beans
- 1 tsp Salt
- ¼ tsp Turmeric Powder
For Grinding
- ¾ Cup Toor Dal 1 Cup - 250ml
- ¼ Cup Split Bengal Gram (Channa Dal / Kadalaparuppu)
- 5 Red Chili
- ¼ tsp Salt
- a Pinch Asafoetida (Asafetida / Hing)
For Tempering
- 2 tsp Oil
- 1 tsp Mustard Seeds
- 1 tsp Split Urad Dal
- Few Curry leaves
Making Usili
Heat the oil in the pan, and add the ground paste and keep the flame in low
Allow the ground paste to cook in oil and it will crumble down into smaller pieces.
Tempering Process
In a separate pan, heat some oil and add mustard seeds when the oil is hot.
When the mustard seeds starts to sputter, add the urdhal and fry till it turns into golden brown color.
To this add chopped Kothavarangai(Clustered Beans) along with turmeric powder, salt and sprinkle some water to cook the Kothavarangai(Clustered Beans). We can also cook the cluster beans in pressure cooker and then add the cooked cluster beans directly after seasoning. This will simplify our process further.
