Tomato Pulao, a delectable and easy Lunch Box recipe for kids and adults. Ripe tomatoes are cooked with onion and mild spices to get fluffy and tasty pulao. This is a easy one-pot recipe where we are the pulao directly in a pressure cooker.

Pressure Cooker
- 1 Cup Raw Rice Basmati rice is preferrable but we can use any raw rice
- 1 cup Water for cooking the Raw Rice
- 2 Tomato 1, Roughly chopped
- 1 Onion Finely Chopped
- 1 tsp Ginger Garlic Paste
- 1 tsp Red Chili Powder
- 1 tsp Coriander Powder
- 1 tsp Salt Adjust As Needed
- 1 Pinch Turmeric Powder
- 5 Mint Leaves
- 1 tbsp Coriander Leaves
- ½ tsp Kasoori Methi (Dry Fenugreek Leaves)
For Tempering
- 1 tbsp Oil
- 1 tbsp Ghee (Clarified butter)
- 1 tsp Cumin Seeds
- ½ inch Cinnamon Stick
- 3-4 Cloves
- 1 Bay Leaf
- 2 Green Chili Slit
Cooking the Pulao
Heat oil and ghee in a pressure cooker. Add cumin seeds, cinnamon, cloves and bay leaf. Give a mix
Then add slit green chili and curry leaves. Give a mix
Next, add chopped onions to the pressure cooker. Also add ginger-garlic paste. Saute the onions and ginger-garlic paste till onions turn translucent
Once the onions are translucent, add the chopped tomatoes and the tomato puree we ground and give it a good mix
To the pressure cooker, add red chili powder, salt, coriander powder and turmeric powder. Stir well. Allow the onion-tomato-spices to cook for a minute
Then, add the mint and coriander leaves. Also crush the kasoori methi and add it to the Pulao mixture
Now, drain water from the soaked rice and add it to the pressure cooker. Give a gently mix not breaking the rice
Then add a cup of water to the cooker. Give a mix. Close the pressure cooker with a lid and cook in low flame for 20 mins.
After the pressure is fully released, open the cooker lid. Tomato Pulao is ready. Gently mix. Garnish with coriander leaves
- Cooking Time - For Basmati Rice, which is soaked for about 20 minutes can be cooked in low flame for 20 minutes to get fluffy Pulao
- Water Ratio - For Basmati Rice, it would be 1:1 (1 cup water for 1 cup rice). But for this ratio, please make sure that the rice is soaked in water for about 20 minutes
The ratio and cooking time may vary for other types of rice.
